Fried chicken

Perfectly fried golden-brown , crunchy, shatteringly crisp crust, with super juicy, moist meat—no dry, tastelessness here.

INGREDIENTS:-
For marinade

Milk 1 & 1/2 cup (375ml)
lemon juice 1 & 1/2 tbsp
Dried rosemary 2 tsp
Red chili powder 3 tsp
Salt 3 tsp
Cardamom powder 1 tsp
Finely chopped garlic 1 tbsp
Finely chopped ginger 1 tbsp
Eggs 3
boneless chicken thighs 1200g

INGREDIENTS
for flour mixture:

All-purpose flour 1 &1/2 cup (200g)
Cornstarch 1 cup (110g)
Red chili powder 2 tsp
Garlic powder 1 tsp
Fennel seeds 1 tsp
Coriander powder 2 tsp
Baking powder 2 tsp
Black pepper just a pinch
Salt 2 tsp

oil for deep frying

directions
1 : fry at medium heat.
2 : Let marinated chicken sit at room temperature for 30 minutes before frying . if you start frying it , straight from the fridge . The temperature of the oil will drop and your chicken won't cook evenly . Plus it will absorb oil , means no crisp.
3 : Do not fry more than 3 - 4 pieces at a time . crowding the pan with chicken will lower the oil's temperature , up the cooking time , and make the flour coating greasy .
4 : it is very important to maintain the oil's temperature . Too hot oil will make the exterior dark very quickly while the inside's still raw .
5: cook for 12-15 minutes until nicely brown .

Tasty Cook-Off: Fried Chicken

Here is what you'll need!

BUTTERMILK FRIED CHICKEN THIGHS
Servings: 8-12

INGREDIENTS
8-12 boneless skinless chicken thighs
Oil for frying

Buttermilk Marinade
2 cups buttermilk
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon cayenne pepper

Seasoned Flour
2 cups all-purpose flour
1 tablespoon salt
1½ teaspoons black pepper
1 teaspoon cayenne pepper
1 tablespoon garlic powder

Dill Dip
1½ cups plain Greek yogurt
3 tablespoons chopped dill
1 tablespoon garlic powder
2 tablespoons lemon juice

Honey Lemon Dip
1 lemon, juiced
2 tablespoons honey
1 teaspoon red chili flakes

PREPARATION
In a medium bowl, combine all the buttermilk marinade ingredients. Toss in chicken thighs and marinate for at least one hour in the refrigerator.
In a small bowl, combine all the ingredients for dill dip. Cover and let sit for at least an hour in the refrigerator.
In a small bowl, combine all the ingredients for honey lemon dip.
In a medium bowl, combine all ingredients for seasoned flour. Dip chicken in flour until chicken is completely covered. Repeat for all chicken thighs.
Heat the oil to 350˚F/180˚C in a deep pot. Do not fill more that ½ full with oil. Carefully fry chicken for roughly 7 minutes, or until cooked through (internal temperature should reach 165˚F/75˚C), and it’s golden brown and crispy. Drain on a paper towel.
Serve with dips.

SZECHUAN PEPPER FRIED CHICKEN LEGS
Servings: 6-8

INGREDIENTS
8 drumsticks
Oil for frying
Salt, to taste
Pepper, to taste

Batter
1 cup cornstarch
½ cup all-purpose flour
1 teaspoon salt
¼ teaspoon black pepper
1 cup water

Spice Mix
1½ tablespoon Szechuan pepper powder
1 tablespoon red pepper flakes
1 tablespoon cumin
3 tablespoon sugar
1 teaspoon salt

Aromatics
6 cloves garlic chopped
2 tablespoons ginger chopped
1 cup dried chillies
3 tablespoons vegetable oil

PREPARATION
Pat dry drumsticks and season with salt and pepper. Air-dry in refrigerator for at least 2 hours and up to overnight.
Prepare all aromatics for stir frying, and combine spice mix ingredients in a small bowl. Stir together until evenly mixed.
Heat ¾ inch of vegetable oil to 300°F/150˚C in cast-iron skillet or large pot.
Whisk together ingredients for batter until smooth. Dip individual drumsticks in the batter to coat, allowing excess batter to drip before placing in frying oil.
Fry drumsticks 8-10 minutes, turning halfway through. Remove and rest chicken on paper towels to drain for at least 10 minutes.
Turn oil temperature up to 375°F/190˚C. Re-fry drumsticks for 3-4 minutes or until golden brown, turning frequently. Remove to paper towels to drain.
In a wok or large sauté pan, heat 3 tablespoons of vegetable oil over high heat. Once it smokes, carefully add aromatics and stir fry for 90 seconds. Add chicken and sprinkle half of the spice mix evenly over the top. Toss chicken and aromatics to coat evenly, then add the other half of the spice mix and repeat. Remove from heat.
Arrange chicken on plate and top with stir fried aromatics.
Enjoy!

TEBASAKI FRIED CHICKEN WINGS
Servings: 2

INGREDIENTS
8 chicken wings
Salt, to taste
Pepper, to taste
Potato starch, to dredge
Frying oil, as needed

Sweet Soy Glaze
½ cup (100 milliliters) soy sauce
¼ cup (50 milliliters) mirin
¼ cup (50 grams) sugar
¼ cup (50 milliliters) sake
1 clove garlic, grated

Garnish
Toasted white sesame

PREPARATION
Preheat oil to about 160˚C/320˚F.
Season both sides of the chicken wings with salt and pepper. Coat with potato starch.
Fry the wings at 160˚C/320˚F for approximately 7 minutes. Remove cooked wings from oil.
Raise oil temperature to about 180˚C/350˚F. Return the wings to the oil and fry until golden brown, about 3 minutes. Drain them on paper towels. Set aside.
Make the graze. Combine all the glaze ingredients in a shallow pan and bring it to a simmer. Reduce until thick. Toss in the wings.
Sprinkle toasted white sesame.
Enjoy!

Ingredients

Chicken Parts (4 Wings, 3 Drumsticks & Thighs)
2 Cups All-Purpose Flour
1 Qt Vegetable Oil
2 Cups Buttermilk
2 Tbs Hot Sauce
1-1/2 Tbs Salt
1 Tbs Parsley Flakes
1 Tbs Garlic Powder
1 Tsp Paprika
1/2 Tsp Cayenne Pepper
1/2 Tsp Black Pepper

Instructions

1. Remove excess fat from chicken. Rinse chicken with cool water and 1 tbs of salt.

2. Place chicken pieces in a bowl. Add hot sauce, parsley, and buttermilk, then stir in well.

3. Poke holes in chicken.

4. Cover and place in refrigerator to marinate for 8+ hours.

5. After 8 hours, take chicken out of the refrigerator, sit it aside, and let it come to room temperature.

6. Sit chicken on a plate to allow excess buttermilk to drip off.

7. In a bowl, combine 1 cup of flour, salt, pepper, garlic powder, paprika, and cayenne then stir in well.

8. Coat chicken with seasoned flour and sit it aside.

9. Place pot over medium heat and add oil.

10. Add 1 cup of flour to a bowl. Right before adding the chicken to the pot of hot oil, coat with flour AGAIN and shake off excess flour.

11. While cooking, poke a few holes in the thickest part of the thighs and drumbsticks so that they cook all way through (fry wings over medium-high heat for 12 minutes. Fry drumbsticks for about 15 minutes and thighs for about 17-20 minutes over medium heat).

12. After removing chicken from the oil sit it aside on a paper toweled plate. The THIGHS and DRUMBSTICKS are NOT DONE yet if there is clear juice running out of them. If you see juice running out of the thighs and drumbsticks add them back to the pot to continue cooking a little longer.

Ingredients

1.50 Lbs Boneless Chicken Breast
2 Large Eggs
3 Cups Vegetable Oil
1-1/2 Cups All-Purpose Flour
4 Tbs Whole Milk
1 Tbs Salt
1 Tbs Garlic Powder
1 Tsp Black Pepper
1/2 Tsp Cayenne

Chicken Fingers aka Chicken Tenders

Can you believe when I was young I actually thought chicken fingers were the fingers of a chicken? Well I did, which is why I would never eat them when they were served in my school for lunch. When I got old enough to realize they weren't actually chicken fingers and that it was just a name they were given, I gave them a shot and have enjoyed munching on them every since. Chicken fingers are very popular in Philadelphia, which is where I was raised and currently lived! There are Deli's and Chinese fast food stores on pretty much every other corner in Philly.....and almost all of them have chicken fingers on their platter menu. Chicken fingers aka tenders, are often served with french fries, cole slaw, and honey mustard but you can also find them at your local supermarket in the frozen dinner section. They're usually sold in bunches, 35 to 40 pre-cooked fingers in a bag. All ya got to do is heat up some oil and fry them for 8 to 9 minutes. They are often served at holiday or cocktail parties and in hospitals as finger food for patients who can't use eating utensils. They are also the perfect finger food lunch for children.... kids looooove chicken fingers. The next time you have a gathering or get together and decide to cook some simple finger food, give these chicken fingers aka tenders a try... they are easy to make, really good, and can be eaten with just about anything. Enjoy!

Instructions

1. Start off by beating your eggs. Crack 2 eggs, add them to a small bowl, add your milk, and whisk for 45 seconds or until well blended. This is called egg wash for those of you who may not know and egg wash is a gluing agent used to aid the breading in sticking to the meat.

2. Now you're going to focus on the breading and seasoning. Get a big bowl and add your flour, salt, garlic powder, pepper, and cayenne, then whisk until well blended.

3. We're using boneless chicken to make our chicken fingers but even boneless chicken may have a little fat on them sometimes. So pull off any excess fat that you may see on the chicken, then wash them with salt and water. If the chicken is frozen, fill a big bowl up with water and add 1 tbs of salt to the water. Sit the frozen chicken in the salt water until thawed. Cut the boneless chicken into chicken finger-shaped pieces.

4. Coat your chicken with the seasoned flour, fully dip into the egg wash, coat with more flour, then sit them aside for 15 to 20 minutes. Now, how you do this is important.

For an authentic crunchy chicken finger texture, coat the chicken pieces in the flour, dip them into the egg wash, but DON'T DRAIN THE EXCESS EGG WASH!!!! And what I mean by this is, don't allow the excess egg to drip off the chicken before coating it again with flour. The excess egg wash is what gives the second coating a crumbly look. So after dipping the chicken into the egg wash, immediately roll the chicken around in the seasoned flour until you get a rocky coating. 5. Next, place a skillet over medium-high heat, then add the oil.

6. Once the oil is hot, add your chicken and fry for 5 to 7 minutes.

Fry a few chicken fingers at a time. Don't fry them all at once!
7. Once done, sit your chicken fingers aside on a paper toweled plate to drain the excess oil. As I said, these are really good served with french fries, cole slaw, and your favorite dipping sauce. Enjoy!!!

Crispy Honey-glazed Fried Chicken
Servings: 8

INGREDIENTS

Spice Mix
2 tablespoons salt
3 tablespoons black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
3 tablespoons paprika
2 tablespoons cumin
2 tablespoons oregano
2 teaspoons cayenne pepper

3 cups all-purpose flour
8 bone-in, skin-on chicken drumsticks and thighs
3 cups buttermilk
Oil, for frying
Honey, for serving

PREPARATION
1. In a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined.
2. Pour half of the spice mix into the flour, mixing until the spices are evenly distributed throughout the flour.
3. Add the chicken to a bowl, and sprinkle the remaining spice blend over it. Mix until all the chicken pieces are evenly coated.
4. Pour the buttermilk over the chicken, and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color.
5. Marinate the chicken in the fridge for 2 to 8 hours.
6. Heat oil to about 325°F (170°C) in a large cast iron skillet.
7. Dredge each piece of chicken into the flour, shaking off any excess. Dip them back into the buttermilk mixture, then back into the flour. Make sure to shake off excess flour or it’ll burn while frying.
8. Fry 3-4 chicken pieces at a time, occasionally turning the pieces over. Cook for about 10-12 minutes, until golden brown and crispy.
9. Rest the chicken pieces on a wire rack to let excess oil drain off.
10. Drizzle with honey, then serve!
