1. 500 gm Basmati rice
2. 4 green cardamoms
3. 1 bay leaf
4. 4 cloves1 black cardamom
5. 1 1/2 tsp Shahi jeera/ caraway seeds
6. 1 nutmeg and mace
7. 3 cinnamon sticks
8. 10 black peppercorns
9. 1 tbsp Oil
10. Salt to taste
11. Water as required

Chicken Kofta:
1. 500 gm ground chicken
2. 1 egg
3. 1 tsp coriander & cumin powder
4. 1/2 tsp turmeric, garam masala and black pepper powder
5. 2 tbsp corn flour
6. 1 tsp ginger garlic paste
7. Salt to taste
8. 1 tbsp Oil

Kofta Gravy:
1. 3 tbsp oil
2. 3 cardamom pods, 1 cinnamon stick, 3 cloves, 2 bayleaves and 1/2 tsp whole cumin
3. 3 big onions, thinly sliced
4. 4 green chilies, chopped
5. 1 tsp ginger paste
6. 1 tsp garlic paste
7. 2 red tomatoes chopped
8. 2 tsp coriander powder
9. 1 1/2 tbsp red chili powder
10. 2 -3 tbsp shahi biryani masala
11. 3 tbsp yogurt
12. 1/2 cup milk
13. Salt to taste
14. Chopped coriander powder

Garnishing and Layering:
1. 1 cup crispy onion fry/ beresta
2. 1/4th cup ghee
3. Coriander leaves, chopped
4. Saffron milk/ color: 2 -3 tsp
5. Chopped corainder leaves
6. Foil paper to cover the biryani pot

1. Wash the rice and soak for at least 30 minutes.
2. Bring enough water to boil with all the whole spices in the water. (Add all the whole spices in a cheese cloth and drop in the water)
3. Incorporate shahi zeera, oil and chopped coriander leaves and salt.
4. Put the rice in the boiling water and cook up to 70% done. Keep this rice aside.
5. To make Kofta, mix all the ingridients together with the ground minced chicken.
6. Apply oil on your palm and make small balls.
7. Drop these koftas (chicken balls) in hot oil.
8. Fry until the koftas turn to golden brown.
9. To make gravy heat some oil in a pan, and add cardamom pods, cloves, cinnamon stick, bay leaves and whole cumin.
10. Add thinly sliced onions. Saute until it turns to light golden brown.
11. Add and sauté chopped green chilies, ginger and garlic paste.
12. Add in chopped red tomatoes and cook till they go soft.
13. Put in all the dry spices, chili and coriander powder, and shahi biryani masala followed with yogurt.
14. Stir well and cook until the oil and spices separate
15. Add milk and bring the gravy to a boil.
16. Drop the koftas in the thick gravy and cook for 5-6 minutes on a low heat.
17. Sprinkle some chopped fresh coriander to finish it off.
18. To layer the biryani, grease the bottom of a deep pan with little ghee.
19. First layer is the pre-cooked rice, spread evenly. Then put in chicken kofta with gravy.
20. Repeat the method till you run out of rice and koftas. Ensure to have rice on the last layer.
21. Top it up with crispy fied onion, pure ghee, Kewra water, color water and some coriander leaves.
22. Seal the top with aluminum foil paper.
23. Put a tawa on the cook top and place biryani pot. Cook on a low heat for about 15 minutes.
24. Serve hot with your choice of raita.

Chicken = 500 g.

Zeera roasted and crash = 1 half tea spoon.

Lal Mirch Powder (Red Chili Powder) = 1 tea spoon.

Namak (Salt) = 1 tea spoon.

Garam Masala Powder = 1 tea spoon.

Kali Mirch Powder = half tea spoon.

Onion = 1 small size.

Chane (Roasted) = 1 small bowl.

Ginger and Garlic Paste = 1 table spoon.

Green Chili = 5-6.

Hara-Dhaniya (Coriander Leaves) = 2 table spoon.


Basmati Rice (Kaccha) = 500 g.

Onion = 1 big size fine chopped

Zeera = 1 tea spoon.

Kali Mirch = 10

Dalchini = 3 piece.

Luang = 6

Hara-Dhaniya (Coriander Leaves) = 2 table spoon.

Podina (Mint) = small bowl.

Green Chili = 5-6.

Dahi = 4 table spoon.

Namak (Salt) = 1 and half tea spoon.

Tamatar (Tomatoes) = 1 big size.

Lal Mirch Powder (Red Chili Powder) = 1 table spoon.

Prepare Koftay (Meatballs):
-Beef qeema (Beef mince) ½ kg
-Pyaz (Onion) 1 medium
-Hara dhania (Coriander) handful
-Hari mirch (Green chilies) 4-5
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Zeera powder (Cumin powder) 1 & ½ tsp
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chili powder) 1 & ½ tsp
-Garam masala powder (Whole spice powder) 1 tsp
-Bread slice 1
Prepare Biryani:
-Ghee ½ Cup
-Kali mirch sabut (Black pepper corns) 2-3
-Laung (Cloves) 2-3
-Darchini (Cinnamon stick) 1
-Hari elaichi (Green cardamom) 2-3
-Badi elaichi (Black cardamom) 1
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) slices 2 medium
-Timatar (Tomatoes) slices 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Lal mirch powder (Red chili powder) 2 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder (Whole spice powder) ½ tsp
-Javitri powder (Mace powder) ½ tsp
-Jaifil powder (Nutmeg powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Hari mirch (Green chilies) crushed 1 tbs
-Dahi (Yogurt) whisked 1 Cup
-Podina (Mint leaves) handful
-Hara dhania (Coriander) handful
-Hari mirch (Green chilies) slit 3
-Chawal (Rice) 2 Cups (Boiled with whole spices & salt)
-Lemon juice 2-3 tbs
-Podina (Mint leaves) handful
-Hara dhania (Coriander) handful
-Aloo (Potatoes) 2-3 medium (Boiled with yellow food color & salt) (optional)
-Hari mirch (Green chilies) slit 2
-Zarda ka rang (Yellow food color) ½ tsp or as required

Prepare Koftay (Meatballs):
-In chopper,add beef mince,onion,coriander,green chilies,ginger garlic paste,cumin powder,salt,red chili powder,whole spice powder,bread slice and chop until well combined.
-Grease your hands with oil,take a mixture and make 12-15 meat balls/koftya of equal sizes.
-In frying pan,add oil and fry meat balls/koftay for 2 minutes and set aside.
Prepare Biryani:
-In pot,add ghee and let it melt,add black pepper corns,cloves,cinnamon stick,green cardamom,black cardamom and cumin seeds,mix well.
-Add onion and fry until light brown.
-Add tomatoes and ginger garlic paste and mix well.
-Add red chili powder,coriander powder,turmeric powder,whole spice powder,mace powder,nutmeg powder,salt,green chilies and mix well.
-Add yogurt,mix well and cook on high flame until oil separates.
-Add fried meat balls/koftay,mint leaves,coriander,green chilies,boiled rice,lemon juice,mint leaves, mcoriander,potato,green chiliesa and yellow food color,cover and cook for 15-20 minutes on low flame.
-Kofta biryani is ready.

Murgh Noormahal Biryani (Chicken Kofta Biryani) - New Eid Recipe By Sharmilazkitchen

Noormahal Biryani is named after Noormahal palace which was the princely estate of the royal family of Bahawalpur (now in Punjab, Pakistan) during the British Era. Minced tender and juicy chicken koftas (balls) tossed in delightful sauce, layered with flavorful basmati rice and cooked on dum for shorter span.


For Rice: 500 gm Basmati rice
4 green cardamoms
1 bay leaf
4 cloves
1 black cardamom
1 1/2 tsp Shahi jeera/ caraway seeds
1 nutmeg and mace
3 cinnamon sticks
10 black peppercorns
Salt to taste
Water as required
For chicken kofta: 500 gm ground chicken

Ingredients for 5-6 servings:

For Preparation of Koftas

Boneless Mutton – 1 Kg
Ginger Garlic Paste – 1 Tablespoons
Red Chilli Powder – 3 Teaspoons
Turmeric Powder – 1 Teaspoons
Salt – 1 ½ Teaspoon
Spices – 1 Teaspoon
Mint Leaves – 1 Bunch (Medium size)
Chopped Coriander – 1 Bunch (Medium Size)
Cooking Oil for Frying

Procedure :

In an empty bowl, add boneless mutton, ginger garlic paste, red chilli powder, salt, turmeric powder, spices, mint leaves and chopped coriander. Grind this mixture into a paste. Divide them into portions and mold them into medium sized round balls or koftas. In a frying pan, add oil for frying and when the oil is hot, add these koftas and fry till golden brown.

Ingredients for Preparation of Gravy or Aqni:

Cooking Oil – 5 Tablespoons
Ginger Garlic Paste – 2 Tablespoons
Cinnamon (Small sticks) – 2
Cloves – 3
Caraway Seeds (Shahzeera) – 1 Teaspoon
Turmeric Powder – 1 Teaspoon
Big Chopped Tomatoes – 4
Red Chilli Powder – 4 Teaspoons
Whipped Curd – 3 Cups
Mint Leaves – ½ Bunch
Chopped Coriander – ½ Bunch
Whole Green Chilles – 3
Spices (Garam Masala) – 1 Teaspoon
Chopped Onions Fried – 4

In a separate saucepan, cooking oil, ginger garlic paste, cinnamon, cloves, caraway seeds, turmeric powder, chopped tomatoes, close the lid and cook for 5 minutes. Mix well and add salt, red chilli powder, stir well and add whipped curd, mint leaves, chopped coriander, whole green chillies and close the lid. Let it cook for 5 minutes. Add fried koftas and let it cook for 5 minutes. Switch off the flame and add spices and chopped onions fried to crispy.

Ingredients for Preparation of Rice:
Water – 4 Litres
Rice – 1 Kg
Salt – 4 Teaspoons
Caraway Seeds – 1 Teaspoon
Cloves – 3
Cinnamon (Small Sticks) – 3
Mint Leaves – ½ Bunch
Chopped Coriander – ½ Bunch
Green Chillies – 3-4

In a separate cooking saucepan, add water, salt, caraway seeds, cloves, cinnamon, mint leaves, chopped coriander, whole green chillies and close the lid. Let the water comes to boil. Add 1 kg of washed rice. Semi cook the rice and drain the water.

Ingredients for Preparation of Mutton Kofta Biryani:

Semi Cooked Rice – 1 Kg
Gravy or Kofta Aqni
Chopped Coriander – Handful
Mint Leaves – Handful
Milk – ½ Cup
Saffron Strands – 10-12
Pure Ghee – 2 Teaspoons
Fried Onions – Handful
Juice of 1 Lemon
Dough for sealing the lid

Take out half of the rice in a bowl. On the remaining half, spread the gravy with koftas or kofta aqni. Spread the rice on the gravy which we kept aside in a bowl. add chopped coriander, mint leaves, milk with few strands of saffron soaked in it, add pure ghee, fried crispy onions, juice of lemon. Fix the lid using dough to retain the steam. Cook on medium flame for 10 minutes and keep changing the position of the saucepan so that the heat spreads evenly.When the steam develops, simmer for 15 minutes.

The delicious kofta biryani is ready. Serve with Dahi Ka Raita.

150-200 gm curd
1 tbsp ginger garlic paste
1 Tbsp salt
Soaked rice 4 cup
1 piece of coal

A fragrant, delicious biryani that will leave you asking for more. potato koftas a spicy gravy and steamed rice are layered in a dish that is topped with thick curd whisked with mint and coriander. This is baked until the flavors seep into one another.

Potatoes 200 Grams
Shahi jeera 1/2 Teaspoons
Cloves 3 Clove
Cinnamon stick 2 Piece
cashew nuts 10 Grams
Onion 1 Numbers
salt To taste
Ginger garlic paste 1/2 Teaspoons
Chilli powder 1 1/2 Teaspoons
Garam masala 1/2 Teaspoons
Chana powder 1 Teaspoons
Mint leaves 1/2 Bunch
Coriander leaves 1/2 Bunch
Cumin powder 1/4 Teaspoons
Fried onions 1/4 Cup
Oil for fry 1 ml

1.Heat oil in a pan add shahi jeera, cloves,cardamom, cinnamon, cashew nuts saute it for a minute

2. Then add onions pieces, salt,ginger garlic paste, turmeric saute it and 4 cups of water and 2 cups of soaked rice mix it once and cook till it is 90% cooked.

For making potato koftas.:

3. In a blender add onion pieces, chopped ginger garlic, make it into a coarse paste. Take a bowl add boiled potatoes, prepared coarse paste, chilli powder, garam masala powder, chana powder, salt mix it well.

4. Now make the it into a roundels and dip it into the slurry (cornstarch and water) and drop them in the hot oil. Cook the koftas till it is brown in color and add mint leaves, coriander leaves toss it well.

5. Take a bowl add curd, coriander powder, cumin powder, chilli powder mix it and pour this mixture to pan.

6. Add koya (optional) mix it and add 90%cooked rice and add fried onions let it cook for 3 minute in a slow flame with the lid on. Serve with Raita.
