Recipes:
BROWNIE FUDGE CHEESECAKE
Servings: 10-12

INGREDIENTS
Cheesecake
1 box brownie mix, prepared according to package instructions
24 ounces cream cheese, softened
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract

Ganache
1 pound semi-sweet chocolate chips
2 cups heavy cream

PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Prepare the brownie batter and pour into greased springform pan. Bake until set, about 20-25 minutes.
3. Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
4. Remove brownies and lower oven temperature to 325˚F/170˚C.
5. Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
6. Remove cheesecake and refrigerate for 4 hours, or overnight.
7. Heat or microwave whipping cream to just before boiling and pour over chocolate chips.
8. Stir continuously until the chocolate is melted and smooth.
9. Allow the ganache to sit for 10-15 minutes.
10. Transfer cheesecake to a baking pan with a wire rack.
11. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
12. Allow ganache to cool and set for 30 minutes.
13. Enjoy!

CHOCOLATE PEANUT BUTTER CHEESECAKE
Servings: 8-10

INGREDIENTS
10 graham crackers
7 tablespoons melted butter
24 ounces cream cheese
1½ cups powdered sugar
1 teaspoon vanilla extract
1½ cups chocolate chips, melted
2 cups peanut butter, melted
1 cup powdered sugar

PREPARATION
1. Place graham crackers into a plastic bag and crush them into fine crumbs with a rolling pin.
2. Pour the graham cracker crumbs into a bowl and combine with melted butter, mixing until the texture is like slightly wet sand.
3. Press the graham cracker crumbs in an even layer into the bottom of a 9-inch springform pan. Refrigerate.
4. In a large bowl, mix together softened cream cheese until smooth.
5. Add the powdered sugar and vanilla and continue to mix until there are no lumps.
6. Add the melted chocolate and mix until the color is even.
7. Pour the mixture over the graham cracker crust in the springform pan. Using a spatula or spoon, smooth the top. Refrigerate.
8. In a large bowl, mix together melted peanut butter and confectioner’s sugar.
9. Pour mixture over cheesecake in springform pan. Use a knife or spatula to spread evenly and smooth the top.
10. Refrigerate for 2-4 hours.
11. Enjoy!

No-Bake Dulce De Leche Cheesecake
Serves 8-10

INGREDIENTS
Crust
24 chocolate cream cookies
⅓ cup melted butter

Filling
13 ounces dulce de leche
8 ounces cream cheese
1 tablespoon vanilla extract
1 cup whipped cream

Garnish
8-10 strawberries, halved

PREPARATION
1. Crush cookies and mix with butter. Spread mixture over pie pan, pressing down to make a compact crust. Refrigerate crust while making filling.
2. Mix filling ingredients until smooth. Spread mixture over pie crust.
3. Refrigerate the pie for at least 4 hours or overnight. (If you’re in a hurry, you could also freeze the pie for 1-2 hours.)
4. Top with strawberries, cut, and serve.
5. Enjoy!

Cookies And Cream Cheesecake
Serves 6-8

INGREDIENTS
36 chocolate sandwich cookies
5 tablespoons melted butter
32 ounces cream cheese
⅓ cup sugar
1 tablespoon vanilla extract
1 cup milk, warm
1 tablespoon gelatin

PREPARATION
1. Separate the cream from the cookies into 2 different bowls.
2. Place the cookies into a plastic bag and crush them into fine crumbs with a rolling pin. Set aside 1/2 cup of the crumbs for later.
3. Pour the cookie crumbs into a bowl and combine with the melted butter, mixing until the texture is like slightly wet sand.
4. Press the cookie crumbs in an even layer into the bottom of a 9-inch springform pan. Set aside.
5. In a medium pot over low heat, mix together the cream cheese, sugar, the cream from the cookies, and vanilla extract, stirring until there are no lumps.

Ingredients
Make one 10 inch-25 cm cake (about 10-12 servings):

Crust:
10,5 oz (300 g) Digestive Biscuits
1/2 cup (130 g) Melted Butter
1 tablespoon Honey

Cream Cheese Filling:
1 pound (600 g) Cream Cheese (Philadelphia)
1 cup (200 g) Granulated White Sugar
¾ cup (180 ml) Whipping Cream, chilled
¼ cup (60 g) Unsweetened Natural Plain Yogurt
1 teaspoon Lemon Zest
1 teaspoon Vanilla Paste
4 Eggs
1 tablespoon (8 g) Cornstarch

Directions:

Prepare the Crust:

Crush the biscuits using a food processor until crumbs form.
Pour the melted butter and the honey over the crumbs.
Process until evenly moistened.
Press the crumbs mixture with the back of the spoon into the bottom and 1 inch-3 cm up side of a 10 inch-25 cm greased springform pan (with a removable base).
Refrigerate until prepare the filling.

Prepare the Filling:

In a large bowl mixing the cream cheese until smooth (about one minute).
Add the sugar and mix until creamy.
Add the whipping cream, the yogurt and the eggs one at a time: when you add the eggs don’t overbeat the batter and stop just until combined.
Add lemon zest, vanilla paste, sifted cornstarch and mix just until combined (don’t overbeat it! You’ve to incorporate as little air as possible).
Pour the cream cheese filling over the prepared crust.
Place the cake in a preheated oven at 320° F - 160° C and put a pan with boiling water just under the cake: the steam will keep moist the cake during the baking.
Bake for about 45-55 minutes (the baking time depends to your oven: in some oven you can even bake it for 1 hour and 15 minutes): when the cake is baked the center should jiggle a little. Then turn off the oven, open the oven door and leave the cake in there for another 30-40 minutes so it starts to cool. Then take it out and let it cool completely at room temperature. Cover and refrigerate for at least 4 hours, better overnight.
Run a sharp knife around the inside edge of the pan. Decorate with strawberries or your favourite fruits and serve it.

You can store cheesecake in the fridge for one week. You can freeze it for one month.

5-Minute Microwave Cheesecake
Servings: 1

INGREDIENTS
1 tablespoon butter
2 graham cracker sheets
4 ounces cream cheese, softened
2 tablespoons sugar
3-4 drops vanilla extract
Raspberries, to serve

PREPARATION
1. Melt the butter in a small microwaveable mug or dish. Grease a ramekin with the melted butter.
2. Crush the graham crackers into fine crumbs, then mix it with the remaining butter. With a spoon, press the crust flat against the sides of the dish.
3. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Transfer the mixture on top of the cracker crust, then spread it evenly on top.
4. Microwave for at least 4 minutes, 30-45 seconds at a time at 50% power. Make sure the cheesecake does not bubble over the sides.
5. Chill in the freezer for at least 30 minutes, until it is completely cool to the touch.
6. With a knife, loosen the edges of the cheesecake then invert onto a plate, or eat straight from the dish.
7. Top with a few raspberries, and enjoy!

Peanut Cookie Crust:
250gr/8.8oz peanut cookies
90gr/3.2oz melted unsalted butter

Peanutbutter Cheesecake:
700gr/24.7oz cream cheese
210gr/7.4oz granulated sugar
1 medium eggyolk + 4 whole medium eggs
50ml/1.7fl.oz double cream
1 teaspoon vanilla extract
20gr/0.7oz all purpose flour
200gr/7oz peanutbutter

Peanut Caramel Sauce:
220gr/7.8oz caster sugar
6 tablespoons water
245ml/8.3fl.oz double cream
1 teaspoon vanilla extract
200gr/7oz salted peanuts

Chocolate Ganache:
395gr/13.9oz melted milk chocolate
200ml/6.8fl.oz creme fraiche

NO BAKE BERRY CHEESECAKE RECIPE

Ingredients

250g | 8.8 oz Biscuits (digestives | graham crackers)
110g | 1 stick | ½ Cup Butter
500ml | 2 Cups Cream
225g | 8 oz Cream Cheese
85g | ⅔ Cup Icing Sugar
Zest + Juice from 1 Lemon
15g | 3 Teaspoons Gelatine Powder
2 Tablespoons Boiling Water
1 Can Berries in Syrup
15g | 3 Teaspoons Gelatine Powder
2 Tablespoons Boiling Water

Instructions

Place the biscuits into a food processor and process until fine crumbs form. Transfer to a small bowl.
Melt the butter and cool before pouring into the biscuit crumbs and mix until well combined.
Pour the crumbs into a lined cake tin and use the back of a spoon to compact down. Place the cake tin into the fridge to set.
Whip the cream until soft peaks form by hand or with a hand mixer. Set to the side.
In a medium sized bowl add the room temperature cream cheese and icing sugar. Beat together with a whisk until smooth and lump free.
Zest and juice the lemon and place into the bowl with the cream cheese. Mix to combine.
Dissolve the powdered gelatine in the boiling water and add to the mixing bowl, stirring to combine.
Add the cream to the cream cheese mixture and fold together until well combined. Pour the cheesecake filling on top of the cheesecake base and smooth. Place into the fridge for a few hours to set.
Blend the can of berries and strain through a sieve into a medium sized bowl.
Dissolve the gelatine in the boiling water and pour into the berries. Mix until combined.
Pour the berry mixture on top of the cheesecake and place into the fridge to set for at least 4 hours or overnight.
Serve topped with berries and fresh whipped cream.

Notes

Instead of gelatine you can also use agar agar or just freeze the cheesecake to set.

Chocolate Fudge Brownie Cheesecake

Here is what you'll need!

CHOCOLATE FUDGE BROWNIE CHEESECAKE
Servings: 10-12

INGREDIENTS
Cheesecake
1 box brownie mix, prepared according to package instructions
24 ounces cream cheese, softened
¾ cup sugar
3 eggs, beaten
2 teaspoons vanilla extract

Ganache
1 pound semi-sweet chocolate chips
2 cups heavy cream

PREPARATION
1. Preheat oven to 350˚F/180˚C.
2. Prepare the brownie batter and pour into greased springform pan. Bake until set, about 20-25 minutes.
3. Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth.
4. Remove brownies and lower oven temperature to 325˚F/165˚C.
5. Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly.
6. Remove cheesecake and refrigerate for 4 hours, or overnight.
7. Heat or microwave whipping cream to just before boiling and pour over chocolate chips.
8. Stir continuously until the chocolate is melted and smooth.
9. Allow the ganache to sit for 10-15 minutes.
10. Transfer cheesecake to a baking pan with a wire rack.
11. In a circular motion starting from the inside out, pour the ganache glaze over the cheesecake making sure to cover all sides.
12. Allow ganache to cool and set for 30 minutes.
