Easy No-Bake S'mores Pie | Eat the Trend

You're going to love the decadent yet light whipped chocolate filling, the warm toasted marshmallows, and of course the crunchy graham cracker crust so much you'll be headed back for seconds (and thirds) in no time. Plus, this is a great dessert that can be enjoyed year-round whenever those s'mores cravings hit!

Easy No-Bake S'mores Pie
From Skylar Thomson, POPSUGAR Food

For the crust:
1/2 cup unsalted butter, melted
1/4 cup light brown sugar
1 1/4 cups graham cracker crumbs (about 10 sheets crushed)
1/4 teaspoon salt

For the filling:
2 3/4 cups heavy whipping cream, divided
2 cups milk chocolate chips
1 tablespoon unsweetened cocoa powder
1/2 teaspoon vanilla extract
1/8 teaspoon kosher salt

For the topping:
1 cup large marshmallows
1 cup mini marshmallows
2 tablespoons chocolate chips
2 tablespoons graham cracker crumbs
1 tablespoon chocolate syrup

To make crust: In a large bowl, combine butter, sugar, graham cracker crumbs, and salt and mix until the texture resembles wet sand. Press the graham cracker mixture into a 9-inch pie pan and refrigerate for about 30 minutes until firm.

To make filling: Meanwhile, bring 3/4 cup heavy cream to a simmer over low heat and set aside. In a large bowl, combine chocolate chips, cocoa powder, vanilla extract, and salt. Pour the heavy whipping cream over the chocolate and let sit for 2 to 3 minutes until the chocolate begins to melt. Whisk the cream and chocolate together until it becomes silky and shiny. Place the bowl in the refrigerator and chill for 20 minutes.

In a large mixing bowl, using a hand mixer, whip the remaining heavy whipping cream until stiff peaks form. Gently fold the cooled chocolate into the whipped cream mixture until fully incorporated. Be careful to not overmix.

To assemble: Transfer the chocolate mousse into the chilled graham cracker crust, cover with plastic wrap, and refrigerate for 3 hours until firm.

Just before serving, top the pie with marshmallows and use a mini torch to toast them until golden brown. Top with chocolate chips and graham cracker crumbs, and drizzle chocolate syrup over everything.

No-Bake Red, White and Blue Cheesecake - Everyday Food with Sarah Carey

Here's a great way to be independent: Make a July 4th dessert that sets in the fridge! With a buttery graham-cracker crust, a rich cream cheese and yogurt filling, and a sprinkle of fresh berries, this is one treat that everyone will enjoy this holiday. Make sure to save a slice for yourself (before it all disappears!).

Sarah's Tip of the Day:
Get started on the crust by combining graham crackers, butter, granulated sugar, and salt in a food processor before pressing it into a springform pan. Next, use an electric mixer to beat cream cheese, confectioners' sugar, yogurt, vanilla, and salt before gently folding in your whipped cream. Pour into your crust and place in the fridge for at least eight hours. When the time is up, top with sugar-coated berries and serve. I have a feeling you'll want to make this cake every week of the summer!

Subscribe for more easy and delicious recipes:

15 graham crackers (8 ounces)
1 stick unsalted butter, melted
3 tablespoons granulated sugar
2 bars (8 ounces each) cream cheese, room temperature
3/4 cup confectioners' sugar
1 cup Greek yogurt (full-fat)
2 teaspoons pure vanilla extract
1 cup heavy cream, whipped
2 cups fresh berries

Berry Pretty -- This combo of fruit suits July 4th, but you can use whatever's best at the market.

In a food processor, pulse graham crackers until finely ground (you should have about 2 cups). Add butter, 2 tablespoons granulated sugar, and 1/4 teaspoon salt; pulse until combined. Press crumbs evenly onto the bottom and 1 inch up the sides of a 9-inch springform pan.

In a large bowl and using an electric mixer on high, beat cream cheese until fluffy, 3 minutes. Add confectioners' sugar, yogurt, vanilla, and a pinch of salt; beat until smooth. With a rubber spatula, fold in whipped cream. Pour cream cheese mixture into crust and smooth top. Cover and refrigerate until firm, at least 8 hours (or overnight).

Combine berries and remaining 1 tablespoon granulated sugar; let stand 15 minutes. Run a knife around edge of cake; release sides to remove from pan. Top with berries and juices.

You'll Need:

For the honey spheres:

- ⅛ cup warm water
- ¼ cup honey
- 1 gelatin sheet, soaked (1 tsp unflavored gelatin powder)

For the cake base:

- 1¼ cups graham cracker crumbs
- ¼ cup melted butter

For the honey cream:

- 1 egg yolk
- ⅛ cup water
- ¼ cup sugar
- 1 tbsp honey
- ⅔ cup cream cheese
- 2 gelatin sheets, soaked (2 tsp unflavored gelatin powder)
- 1 tsp lemon juice
- 1¼ cup heavy cream, lightly whipped
- yellow food coloring

- 6-inch springform pan
- half sphere silicone mold
- new bubble wrap
- honey to decorate

Here's How:

1. Dissolve the honey in warm water and add the previously soaked gelatin sheet. Stir everything together, pour the mixture into a silicone mold, and freeze for at least 2 hours.

2. Mix the graham cracker crumbs with melted butter, press the mixture into the bottom of the cake pan, smooth out the top, and refrigerate the pan for 30 minutes.

3. Place a heat-resistant bowl on a pot of water and add the egg yolk, water, sugar, lemon juice, and honey to the bowl. Heat the pot on low and whisk everything together over the warm water bath. Remove the bowl from the pot and stir in the previously soaked gelatin sheets and cream cheese. Slightly beat the heavy cream (about 60%), and once the cream cheese mixture has cooled to room temperature, gently fold in the whipped cream.

4. Pour some of the honey cream over the cake base, smooth it out, and press the frozen honey spheres into the cream. Pour about 75% of the remaining honey cream on top, smooth it out, and refrigerate for at least 30 minutes.

5. Dye the remaining honey cream with yellow food coloring, pour it in the pan, and smooth it out. Cut the bubble wrap to fit the cake, carefully press it into the yellow honey cream, and freeze the cake for 2 hours.

Gently peel the bubble wrap from the cake, remove the cake from the pan, and drizzle honey on top for a buzz-worthy dessert! You can find the recipe for the Honey Bee Cake featured in the bonus video here:
