Fried chicken

Perfectly fried golden-brown , crunchy, shatteringly crisp crust, with super juicy, moist meat—no dry, tastelessness here.

INGREDIENTS:-
For marinade

Milk 1 & 1/2 cup (375ml)
lemon juice 1 & 1/2 tbsp
Dried rosemary 2 tsp
Red chili powder 3 tsp
Salt 3 tsp
Cardamom powder 1 tsp
Finely chopped garlic 1 tbsp
Finely chopped ginger 1 tbsp
Eggs 3
boneless chicken thighs 1200g

INGREDIENTS
for flour mixture:

All-purpose flour 1 &1/2 cup (200g)
Cornstarch 1 cup (110g)
Red chili powder 2 tsp
Garlic powder 1 tsp
Fennel seeds 1 tsp
Coriander powder 2 tsp
Baking powder 2 tsp
Black pepper just a pinch
Salt 2 tsp

oil for deep frying

directions
1 : fry at medium heat.
2 : Let marinated chicken sit at room temperature for 30 minutes before frying . if you start frying it , straight from the fridge . The temperature of the oil will drop and your chicken won't cook evenly . Plus it will absorb oil , means no crisp.
3 : Do not fry more than 3 - 4 pieces at a time . crowding the pan with chicken will lower the oil's temperature , up the cooking time , and make the flour coating greasy .
4 : it is very important to maintain the oil's temperature . Too hot oil will make the exterior dark very quickly while the inside's still raw .
5: cook for 12-15 minutes until nicely brown .

Crispy Honey-Glazed Fried Chicken

Here is what you'll need!

Crispy Honey-glazed Fried Chicken
Servings: 8

INGREDIENTS

Spice Mix
2 tablespoons salt
3 tablespoons black pepper
2 tablespoons onion powder
2 tablespoons garlic powder
3 tablespoons paprika
2 tablespoons cumin
2 tablespoons oregano
2 teaspoons cayenne pepper

3 cups all-purpose flour
8 bone-in, skin-on chicken drumsticks and thighs
3 cups buttermilk
Oil, for frying
Honey, for serving

PREPARATION
1. In a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined.
2. Pour half of the spice mix into the flour, mixing until the spices are evenly distributed throughout the flour.
3. Add the chicken to a bowl, and sprinkle the remaining spice blend over it. Mix until all the chicken pieces are evenly coated.
4. Pour the buttermilk over the chicken, and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color.
5. Marinate the chicken in the fridge for 2 to 8 hours.
6. Heat oil to about 325°F (170°C) in a large cast iron skillet.
7. Dredge each piece of chicken into the flour, shaking off any excess. Dip them back into the buttermilk mixture, then back into the flour. Make sure to shake off excess flour or it’ll burn while frying.
8. Fry 3-4 chicken pieces at a time, occasionally turning the pieces over. Cook for about 10-12 minutes, until golden brown and crispy.
9. Rest the chicken pieces on a wire rack to let excess oil drain off.
10. Drizzle with honey, then serve!

Ingredients

Chicken Parts (4 Wings, 3 Drumsticks & Thighs)
2 Cups All-Purpose Flour
1 Qt Vegetable Oil
2 Cups Buttermilk
2 Tbs Hot Sauce
1-1/2 Tbs Salt
1 Tbs Parsley Flakes
1 Tbs Garlic Powder
1 Tsp Paprika
1/2 Tsp Cayenne Pepper
1/2 Tsp Black Pepper

Instructions

1. Remove excess fat from chicken. Rinse chicken with cool water and 1 tbs of salt.

2. Place chicken pieces in a bowl. Add hot sauce, parsley, and buttermilk, then stir in well.

3. Poke holes in chicken.

4. Cover and place in refrigerator to marinate for 8+ hours.

5. After 8 hours, take chicken out of the refrigerator, sit it aside, and let it come to room temperature.

6. Sit chicken on a plate to allow excess buttermilk to drip off.

7. In a bowl, combine 1 cup of flour, salt, pepper, garlic powder, paprika, and cayenne then stir in well.

8. Coat chicken with seasoned flour and sit it aside.

9. Place pot over medium heat and add oil.

10. Add 1 cup of flour to a bowl. Right before adding the chicken to the pot of hot oil, coat with flour AGAIN and shake off excess flour.

11. While cooking, poke a few holes in the thickest part of the thighs and drumbsticks so that they cook all way through (fry wings over medium-high heat for 12 minutes. Fry drumbsticks for about 15 minutes and thighs for about 17-20 minutes over medium heat).

12. After removing chicken from the oil sit it aside on a paper toweled plate. The THIGHS and DRUMBSTICKS are NOT DONE yet if there is clear juice running out of them. If you see juice running out of the thighs and drumbsticks add them back to the pot to continue cooking a little longer.

INGREDIENTS
4 chicken drumsticks
4 chicken thighs

Brine
8 cups water
¾ cup apple cider vinegar
3 tablespoons salt

Seasoning
Lemon pepper, to taste
Onion powder, to taste
Garlic powder, to taste
Seasoned salt, to taste

Breading
3 cups flour
2 eggs
1 cup milk
2 tablespoons hot sauce

Glaze
¼ cup honey
2 tablespoons water

PREPARATION
1. In a large glass bowl, combine water, vinegar, and salt, mixing until some salt is dissolved. Add chicken, cover, and refrigerate for 2-8 hours.
3. Remove chicken from brine, place in bowl and season.
4. In a medium bowl, combine eggs, milk, and hot sauce to create the egg wash. Add flour to bowl and set aside.
5. Transfer chicken to egg wash then the flour, coating evenly.
6. Fry chicken in a large cast-iron pan for 10-15 minutes on each side.
7. Place chicken on drying rack and let cool for 5 minutes.
8. Mix honey and water together and lightly brush each piece of chicken.
9. Enjoy!

Buttermilk Fried Chicken Recipe

Hi Guys, today I’ll show you how to make Crispy Buttermilk Fried Chicken. It’s a simple recipe and I’ll put all the ingredients and measurements in the description below.

Mix a 4 lb cut up chicken with 1 tsp salt, ½ tsp black pepper, ½ tsp cayenne pepper, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder and ½ tsp dried thyme. Mix this well, add ½ cup buttermilk, mix well and marinate for three hours. In my bowl, I have 1.5 cups of all purpose flour. I’m adding 1.5 tsps of salt, ½ tsp paprika and ½ tsp garlic powder. Give it a mix. Here’s our marinated chicken. You want to make sure the chicken is not cold, it should be closer to room temperature. So take your chicken out of the fridge for the last 30 minutes of marination.
Dip each piece of chicken into the flour mixture and put it on a plate. Press the flour on the chicken really well. It should be coated completely with the flour. Shake off the excess and put it on a plate. If you have a baking tray, set the pieces on that instead so you don’t have to use up a few plates.

Get tongs or a slotted spatula ready. A baking sheet with a wire rack so we can transfer the chicken from the pan. I also like to use a splatter screen to avoid extra grease all over my stove. This one has two feet so you can set it down on a counter without the grease touching your counter. Pretty clever. Heat up a heavy pot and pour oil in, no more than half full. I’m using vegetable oil. This cast iron pan is perfect for frying.

Let the oil heat to 350 degrees Fahrenheit. It should take about 7 minutes on medium heat. You can of course use a thermometer if you have one. I test the oil by putting a ball of my flour mixture in if it floats slowly like this, the oil is ready. The ball is golden brown. If it’s darker in color, then your oil is too hot and you can turn the heat down slightly. I’ll put the thighs in and a leg. Don’t overcrowd the pan. Put the splatter screen on. The thighs and breasts will take 18 to 20 minutes to cook. The legs and wings should take 12 to 15 minutes. I’ll turn the chicken over after 9 minutes. The leg I’ll take out a few minutes before the thighs are done. Now the thighs are done. Next I’ll cook the breasts. Turn them over after 8 or 9 minutes. The breasts are done. Now I’ll cook the wings and the last leg. Let’s cut into a leg. The skin is very crispy and the meat is extremely juicy. If you’re not using a thermometer for the oil, you do have to be careful and watch the meat. One batch may be darker in color than the next. My first batch was a little darker in color, I turned the heat down to medium low for the next two batches and got a more golden colored skin. You will have to adjust the heat depending on the color.
