Green Chilies - 2 (chopped)
Milk- 1/4 cup
Saffron Strands- 15 to 20
Bay Leaves- 2
Cinnamon Sticks- 2
Black Cardamom- 1
Green Cardamoms- 2
Black Peppers- 6 to 7
Cloves- 4
Ginger- 1/2 inch piece (julienne)
Garam Masala- 1/4 tsp
Salt- 1.75 tsp or to taste

Water-350 ml(1.25 glass of water)

Chopped french beans-25 gm
Chopped carrot-1(small)

Fresh/frozen peas-50 gm
Ginger garlic paste-1 tbsp
Cumin seeds-1/2 tsp
Green chilli(slit)-2
Bay leaves-2
Green cardamom(elaichi)-2
Clove(lavang)-2
Shahi biryani masala(any brand)-2 tsp
Salt to taste or 1.5 tsp
Cooking oil-3 tbsp

Cooking oil- 5 tbsp
Ghee - 1 tbsp
Water - 1.25 glass
Saffron/food colour
Mace, dry red chilli, clove, bay leaves, cinnamon, black caradamom

Cinnamon(dalchini)-2 inch
Black cardamom-1(crushed)
water-1.5 glass(use the same cup or glass for measuring the rice and water)
Green peas(fresh or frozen)-1/3 cup
Onion(slices)-2(medium)
Potato(chopped)-1(large)
Frech beans-1/3 cup or 25 gm
Cauliflower-1/2 cup or 100 gm
Carrot(chopped)-1/3 cup or 50 gm

Ingredients

Basmati rice - 1 cup
Ghee or oil - 2 to 3 tbsp
Green coriander - 2 to 3 tbsp (finely chopped)
Cumin seeds - 1 tsp
Lemon - 1
Whole spices - 1 brown cardamom, 4 cloves, 7 to 8 peppercorns and 1 inch cinnamon stick
Salt - 1 tsp (to taste)

Directions

Getting ready:

1. Clean and thoroughly wash the rice. Soak them in water for half an hour.
2. Strain out the excess water from rice later.

Making:

3. Heat some ghee in a wok or any other cookware and splutter cumin seeds first.
4. Then add the following whole spices as well – cinnamon stick, black pepper, clove and green cardamom. Saute for few more minutes until fragrant.
5. Now add the soaked rice and stir well for 2 minutes. To it then add 2 cups of water, followed by some salt and lemon juice.
6. Mix everything really well and let the rice simmers for 5 minutes and check later. Check later.
7. Cover the rice again and cook for 5 more minutes. Check again later. The rice is still not cooked through so let them simmer for 3 to 4 more minutes.
8. Check the rice and this time you’ll see puffed rice with no water in the vessel.
9. Rice is cooked through and ready to be served.

Serving:

10. Garnish with some green coriander sprigs.
11. Serve with steaming hot sumptuous curries, with a side assortment of pickle wedges and relish eating.

Besan laddu is a popular Indian sweet dish made of gram flour, boora or powder sugar and ghee. Besan is roasted in ghee till golden brown appearance with nutty fragrance. Then boora or powder sugar is added to it. Cardamom powder, chopped almonds & cashews pieces are also mixed in this mixture optionally.

Hyderabadi Mutton Tahari || Mutton Pulao || Gosht Ki Tahari || Mutton Tahari Recipe - Simple & Easy

Hyderabadi Mutton Tahari is a very tasty authentic dish of Hyderabad made using rice, mutton and various spices.This is also called Mutton Pulao or Gosht ka Pulao. It is a very tasty dish mostly made during special occasions.So lets begin.

MARINATION OF MUTTON
=====================
Mutton - 1/2 kilo or 500 gram

FOR MARINATION WE REQUIRE
=========================
Ginger garlic paste - 1 tablespoon
Red chilli powder - 2 teaspoon
Turmeric powder - 1/2 teaspoon
Garam masala powder - 1 teaspoon
Lemon juice - 1 tablespoon
Yogurt - 200 gram
Salt - 1/2 teaspoon

ADD ALL THESE INTO MUTTON MIX WELL AND MARINATE FOR 30 MINUTES

WASH AND SOAK 1/2 KILO RICE IN WATER FOR 30 MINUTES.

COOKING PROCESS
===============
1.In a pan heat
oil - 4 tablespoon
Clarified butter - 1 teaspoon

2.When oil gets heated add
Cardamom - 3
Cloves - 4
Cinnamom stick - 2
Bay leaves - 2
ADD THESE TO THE OIL AND FRY FOR 30 SECONDS.

3.Now add sliced onion - 1 medium sized and fry till golden brown.

4.Add ginger garlic paste - 2 tablespoon.

5.Add tomatoes diced - 3 medium sized and add salt - 1/2 teaspoon.

6.Add marinated mutton pieces and cook for 15 minutes.

7.In a pressure cooker cook mutton till tender.

8.Transfer mutton in a big pan and add 7 glasses of water.

9.To this water add
Caraway seeds - 1/2 teaspoon
Salt - 1 1/2 teaspoon
Green chillies - 5
Few coriander and mint leaves.

10.Let the water boil then add the washed rice and cook till water dries up.

11.When water gets dried then close lid , lower the flame and cook under dum for 15 minutes.

12.Tasty hyderabadi mutton tahari is ready to serve.

13.Serve hot with onion-yogurt raita.

Fresh Green Peas (ताज़े हरे मटर ) - 1.5 cups
Basmati Rice (बासमती चावल ) - 1 cup ( 200 gms ) ( soaked )
Cashews (काजू ) - 10 to 12
Green Coriander (हरा धनिया ) - 1 to 2 tbsp ( finely chopped )
Ghee (घी ) - 3 to 4 tbsp
Ginger (अदरक ) - 1 inch piece (julienne)
Lemon (नींबू) - 1
Whole Garam masala ( साबुत गरम मसाले )
Black peppers (काली मिर्च ) - 15
Brown Cardamom (बड़ी इलाइची ) - 2
Cloves (लौंग ) - 5
Cinnamon sticks (दालचीनी ) - 2 piece
Green Chili (हरी मिर्च ) - 2 (finely chopped)
Cumin seeds (जीरा ) - 1/2 tsp
Garam masala (गरम मसाला ) - 1/2 tsp
Salt (नमक ) - 1.25 tsp ( or to taste)

How to make Green Peas Pulao :
1. Preheat a cooker for making the Green pea pulao. Once rightly hot, add ghee then add cumin seeds. Reduce flame. Put these whole spices in ghee and saute them.
2. Add ginger juliennes,chopped green chili and saute the spices, add cashews and roast until slightly pink.
3. Add 1.5 cup green peas to it stir and saute for 1 minute. Add rice previously soaked in water for 20 minutes. Stir and saute these for 1 minute. Keep flame medium.
4. Add water, Add salt, garam masala. Mix well. Add 1 lemon's juice to it. Mix it. Close the lid of the cooker and cook until 1 whistle then turn off flame. Wait till pressure escapes.
5. Check the pulao, stir it lightly to make it more grainy, keep it open.

Serving :
6. Mouth drooling Green Pea pulao is ready. Take out the pulao in a serving bowl. Relish with green coriander chutney, curd, pickle or papad.
