HOW TO MAKE CURRIED EGG SANDWICHES

A very popular snack food here in Australia, you won't go anywhere without finding these served up, they are quick and easy to make and godown a treat!
INGREDIENTS: for 2 or 3 sandwiches
4 boiled eggs
4 tablespoons good egg mayonnaise
2 teaspoons curry powder (or 1 if 2 is too potent)

INGREDIENTS IN THIS DISH:

3 Eggs (at room temperature)
6 Slices of Bread
2 Tablespoons of Mayonnaise (plus extra if desired)
1 Teaspoon of Curry Powder (use more or less to taste)
Pinch of Mild Paprika

Preparation Time: About 5 mins
Cooking Time: About 10 minutes

MAKES 12 SMALL SANDWICHES (TRIANGLES)

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

Curried Eggs Sandwich Recipe

We're making a curried egg sandwich today! I've only recently tried this one and thought it tasted really interesting! Turns out it's really simple to make at home, plus it gives your kitchen a really cool smell afterwards (º﹃º ) Let's get to it!

CURRIED EGGS (serves 3)
3 Eggs
1 1/2 Tbsp Curry powder (use your favourite kind)
1 Tbsp Garam masala
1/2 Onion, chopped
3 Garlic cloves minimum, minced
2-3 Tbsp Mayonnaise
Salt & Pepper to taste
Chili flakes (optional)

Serve with lettuce and tomatoes
Sandwich using your favourite crusty bread, buttered on both sides

Hard boil the eggs and let cool afterwards. If you add 2-3 teaspoons of baking soda to the water, it'll make the eggs so much easier to peel. This is one of those cooking hacks on the internet that actually works and I do all the time (・ω・)b

Slice the bread as thick as preferred, lather on a layer of butter on both sides, and then grill both sides on a pan on medium-low. Let cool on a cooling rack afterwards to retain crispness.

Heat a pan with oil and add in your onion & garlic and sauté until soft. Mix in your curry powder and garam masala. Allow the spices to cook a bit (1 minute, until its awesome aroma fills the kitchen ♡) and then take off the heat and set aside.

Once the eggs are cool enough to touch, start peeling it - and then roughly mash with a fork.
Add in the curried onions and mix through.
Add the mayonnaise next and mix through.

And you're done!
Layer the toasted bread with lettuce, top with your curried eggs spread, sprinkle some chili flakes and flaky salt (optional), top further with a slice of tomato, more greens -
and just enjoy!

Easy Curried Egg Sandwich

Curried Egg Sandwiches

Ingredients:

• 3 Boiled Eggs
• Egg Mayonnaise About 2 Tbsp
• Some Lettuce
• 4 Slices Of Bread
• Butter
• Pinch Of Turmeric
• Pinch Of Curry powder
• Salt To Taste
• Pinch Of Black Pepper
• Pinch Of Garlic Powder

Utensils:
• Potato Masher Or Fork

Method:

1) Butter the bread and put it aside.
2) Take the boiled eggs, mash it using a potato masher or a fork.
3) Add all the spices and if you like a bit of a bite then add a little chilli powder as well.
4) Add 1heaped tablespoon of mayonnaise , mix it well and check the consistency. Add second tablespoon and mix it again. You can always adjust the amount of mayo and spices according to your taste. I have used 2 heaped tablespoons of mayo in this recipe.
5) Take 2 pieces of bread, buttered side up, spread half the filling evenly on each piece, put the lettuce on top, now put the bread on top buttered side down, press it lightly and cut it into desired shape.
6) My curried egg sandwiches are ready.
7) Serve with for lunch, afternoon tea or dinner.

How to make Curried Egg Sandwiches with Japanese Mayo - No Salt required

This is a recipe where I have shown how to make Curried Egg Sandwiches with Japanese Mayo. Curried Egg Sandwiches with Japanese mayonnaise. No salt is required for this recipe as there is Japanese mayonnaise is pretty salts.

Japanese mayonnaise is easily available in Coles, Woolworths and Costco in Australia. The curry powder used is Clive of India, Beef and Coconut Curry Powder. The curry powder is not made from beef or coconut but can be used for beef and coconut curries.

Ingredients
2 boiled eggs
1 tablespoon Japanese mayonnaise
1/2 tablespoon curry powder
4 slices of bread
1 slice cheese
2 slices of ham
A handful of green salad leaves
Butter as required.

Egg Salad Sandwich

Servings: 2


This Japanese-style egg salad sandwich is comforting and delicious, especially on the soft, slightly sweet homemade shokupan. The recipe is double what is shown in the video and uses a standard shokupan mold, which can be purchased online and kitchen specialty stores.

Shokupan

3 cups (500 grams) bread flour, plus more for dusting

2 tablespoons (24 grams) sugar

1 teaspoon (6 grams) kosher salt

1 cup (270 milliliters) water

½ cup (100 milliliters) milk

1½ teaspoons (6 grams) instant yeast

¼ cup (50 grams) unsalted butter, room temperature

Nonstick cooking spray, for greasing


Egg Salad

5 large eggs

3 tablespoons mayonnaise, preferably Kewpie

1 teaspoon sugar

1 tablespoon heavy cream

½ teaspoon kosher salt

2 tablespoons unsalted butter, softened


Special Equipment

Large shokupan mold


Preparation

1. Make the shokupan: Add the bread flour, sugar and salt to a large bowl. Mix well.

2. Make a well in the center of the dry ingredients and add the water, milk, and yeast. Mix with a bowl scraper until a dough forms.

3. Turn out the dough onto a lightly floured surface and knead until smooth and shiny, 5-10 minutes.

4. Flatten the dough a bit, then add the butter to the center and wrap the dough around it. Continue kneading the dough until the butter is well-incorporated, about 10 minutes. Shape the dough into a ball, transfer to a medium bowl, and cover with plastic wrap. Let rise in a warm, draft-free place until doubled in size, about 1 hour.

5. Turn the proofed dough onto a lightly floured surface. Punch down the dough. Shape the dough into a ball and put it in a bowl. Cover with a damp towel and rest it for 20 minutes.

6. Turn the dough out onto a lightly floured surface. Cut in half. Roll one half into an oval shape about 12 inches (30 centimeters) long and 6 inches (15 centimeters) wide. Fold in around 1 inch on both sides of the dough. Roll the dough into a log. Pinch to close the seam. Repeat with the other half.

7. Grease a 4 x 8-inch shokupan mold with nonstick spray. Place the dough pieces side by side in the pan, seam-side down. Cover with plastic wrap and proof in a warm, draft-free place for 1 hour, or until doubled in volume.

8. Preheat the oven at 425°F (220°C).

9. Close the lid of the mold and transfer to the oven. Reduce the oven temperature to 400°F (200°C) and bake the bread for 40 minutes, until golden brown.

10. Remove the pan from the oven, and carefully drop the pan on a flat surface 1-2 times to help release excess air from the bread. Remove the bread from the pan and let cool completely on a wire rack.

11. Make the egg salad: Bring a medium pot of water to a boil over medium heat. Prepare an ice bath in a medium bowl and set nearby. Add the eggs to the boiling water and cook for 12 minutes, then transfer to the ice bath to cool.

12. Once cool enough to handle, peel the eggs. Separate the yolks and whites and add the yolks to a medium bowl. Chop the whites.

13. Mash the egg yolks with a fork, then add the mayonnaise, cream, sugar, and salt, and mix until smooth. Add 2 tablespoons of chopped egg white and mix to incorporate.

14. Make the sandwiches. Slice 4 ½-inch thick slices of bread. Reserve the rest for another use. Spread 1 tablespoon softened butter over 2 slices of bread. Spread half of the egg salad over each buttered slice. Top with the other slices of bread and press down lightly. Cut off the crusts, then slice the sandwiches in half.

15. Enjoy!

Ingredients:-
For Green Masala Paste:-
½ cup Coriander leaves
2 Green chillies
1 tsp. Cumin seeds
2 cloves garlic
½ tsp. ginger pieces
Salt, to taste
Water as required

For Green Bhurji:-
2 tbsp. Butter
6 Eggs
2 tbsp. Green masala paste
2 tbsp. Cream
¼ cup Spring greens, chopped
Salt and pepper, as required

For the Assembly:-
8 Bread slices
2 tbsp. Butter
100 gms. Pizza cheese


Method:-
- Grind together the green masala paste ingredients to a coarse paste.
- In a bowl break the eggs and season them with salt and pepper.
- Then add, fresh cream, green masala paste and whisk with a fork.
- In a pan heat, oil, butter and the egg mixture stirring continuously on a low flame.
- Add spring greens to this mixture and mix.
- For the assembly, butter a bread slice and place the bhurji mixture on top followed by mozzarella cheese, black pepper powder and another buttered slice of bread.
- Toast the sandwich in a Bombay style gas toaster for a minute and a half each side.


Bhurji Sandwich is ready to eat!

A mayonnaise flavoured egg mixture stuffed between the breads and served chilled.

CURRIED EGG SANDWICH - (Serves - 4)

Ingredients

2 teaspoons curry powder
4 eggs, boiled and peeled
8 brown bread slices
½ teaspoon red chilli flakes
Salt to taste
1 spring onion with greens, finely chopped
2 tablespoons mayonnaise + as required

Method

1. Take eggs in a bowl and mash using a fork. Add chilli flakes, curry powder, salt and spring onion with greens and mix. Add mayonnaise and mix well.
2. Spread some mayonnaise onto the bread slices. Top 4 slices with a portion of the egg mixture and spread evenly. Cover with the remaining slices, mayonnaise side down.
3. Cut into triangles and serve immediately with banana wafers and tomato ketchup.
