Blueberry Cake (vegan) ☆ ブルーベリーケーキの作り方

Ingredients: 7 inch round cake pan

For the base:
30g almond
40g rolled oats
30g oil
30g dates

For the filling:
150g cashew nuts
100g blueberry
130g sweetener
200g coconut milk
200g water
1 1/2 tsp agar powder(there's no substitution for this as this is coagulant)
2 tbsp kudzu starch(you could use other kind of starch or even skip this. starch gives a kind of chewy texture)

200g bluberry


Instructions:

1. put all the ingredients of the base into a container of food processor and blend well.
2. put the mixture in a cake pan evenly. bake at 350F/180C for 15 min.
3. put all the ingredients of the filling together and blend with high powder blender.
4. gently heat the mixture up with low to medium heat until it thickens.
5. place another 200g blueberries on the base then pour the filling mixture.
6. leave in a fridge for a few hours.

「作り方」

1、ベース生地の材料を全てフードプロセッサーでよく撹拌し、型に敷き詰める。
2、180℃で15分焼く。
3、フィリングの材料をブレンダーでよく撹拌する。
4、弱火〜中火にかけてとろみがつくまで温める。
5、ブルーベリー200gを型に敷き詰め、フィリングを流し込む。
6、冷蔵庫で2〜3時間冷やしたら出来上がり。

Basic Vegan Yellow Cake
(Makes 1-8-inch pan of cake)

1 cup non-dairy milk
2 tablespoon apple cider vinegar (
1 unbleached all-purpose flour
1/2 cup cake flour (
pinch tumeric
3/4 cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup canola oil
1/4 cup water
1 tablespoon vanilla extract
1/4 teaspoon almond extract

Bake 350 degrees Fahrenheit for 30-35 minutes

Vegan Strawberry Cake Recipe:
2 C All Purpose Flour
1 C Granulated Sugar
1 tsp Baking Soda
1/2 tsp salt
1 C Strawberry Puree
1/3 C Vegetable Oil
1 Tbsp Apple Cider Vinegar
1 Flax Egg ( 1 Tbsp Flax Meal and 3 Tbsp Hot Water)
Pink or Red Food Coloring Optional

Vegan Strawberry Filling Recipe:
1 C Strawberry Puree
1/2 c Chopped Strawberries
1/2 C Granulated Sugar
1.5 Tbsp Corn Starch
3 Tbsp. cold Water

Vegan Buttercream
1 C Vegetable Shortening
1 C Vegan Butter Substitute
2 lbs Powdered Sugar
2 tsp Pure Vanilla Extract
1 pinch of salt

1 Minute Vegan Mug Cake 3 WAYS (MICROWAVE ONLY)

Sometimes all we wanna do is to eat some cake but not spending the whole day in the kitchen. Here comes the recipe you need in your life. All it takes is a minute to bake and less than 3 minutes to whip all the ingredients up.

Note that all cake are moist! These aren't super chewy strange taste kind of mug cake. These are the bomb!

#1 Birthday Cake
4 tbsp flour
1/2 tsp baking powder
3 tbsp sugar
4 tbsp plant based milk (soy, almond, rice milk etc)
1/2 tbsp margarine
1/2 tsp sprinkles

Mix all ingredients (except sprinkles) until there is no lumps then mix in sprinkles. Microwave for 1 minute. Let cool. Add icing. Sprinkle more funfetti sprinkles.

#2 Cookies n Cream Cake
2 tbsp flour
2 tbsp sugar
1/8 tsp baking powder
1 1/2 tbsp plant based milk (soy, almond, rice milk etc)
1 tbsp oil

Mix everything together then add crushed oreo or other cookies n cream biscuits . Microwave for 1 minute. Top with icing and more crushed Oreo.

#3 Chocolate Peanut Butter Cake
2 tbsp wholewheat flour
2 tsp cocoa powder
1/4 tsp baking powder
3 tbsp plant based milk (soy, almond, rice milk etc)
1 tbsp syrup sweetener
1 tsp peanut butter

Mix all together then add tsp peanut butter and place it in the centre of the cake. Sprinkle cacao nibs or chocolate chips. Microwave for 1 minute. Devour!

Note:
To make icing: use confectioners sugar then add in a little milk until the it reaches the consistency you desire. Less milk for thicker icing. Vice versa.

VEGAN WAY: make sure you are using plant based milk and margarine or vegan butter

Vegan Walnut Coffee Cake

Vegan Walnut Coffee Cake - this cake is completely dairy free and eggless, great for vegans, vegetarians and those who is allergic to eggs. I personally not a vegans and have no problem with eggs or dairy products, but this cake is so delicious just like any other cakes. I just love the walnut and coffee flavor so much and with these 2 combinations, you really can't tell if it's a non-dairy cake. I hope you are inspired to make this cake. Enjoy!

Ingredients:
I am using two 7 inch round pan

For the cake:
115g (1/2 cup) unsalted coconut vegan butter (you can use any vegan butter)
170g (3/4 cup) castor sugar
230ml (3/4 cup +2 tbsp) almond milk
1 tsp apple cider vinegar
1 tsp vanilla extract
250g (2 cups) all-purpose flour
1 tsp baking powder
50g (1/3cup + 1tbsp) ground walnuts
100g (slightly less than 1cup) chopped walnuts

For the frosting:
200g (1 cup + 1 tbsp) unsalted coconut vegan butter
125g (1 cup) powdered sugar
2 tbsp espresso coffee syrup
2 tbsp almond milk

Topping:
8 pieces Walnuts
Vegan chocolate shred


Instructions:
Prepare the cake:
1. Preheat oven at 170°C/340°F.
2. Chop the walnut and set aside. Pour the almond milk, apple vinegar and vanilla extract in a glass and set aside.
3. In a large bowl, add butter and sugar. Mix until creamy and fluffy. This will take about 3-5min.
4. Add half the almond milk into the butter mixture. Mix to combine. Sift in dry ingredients in 2 batches. Mix until the flour disappear. Then add the remaining milk and mix to combine. Sift in the remaining dry ingredients. Add the ground walnut and chopped walnut. Then mix them well until incorporated. I alternate the milk and dry ingredients so that the lumps are easy to break.
5. Grease the prepared pans and line parchment paper. Divide the batter evenly into the 2 prepared pans.
6. Bake them in the preheated oven at 170°C/340°F for 35 minutes.
7. Cool them on a cooling rack. The soft can be quite soft and easily broken. Wrap them in cling films and put in freezer for about 30min to harden it.

Prepare the frosting:
8. In a large bowl, add the butter. Mix it until it's creamy and fluffy.
9. Sift in the powdered sugar little by little. This is to prevent lumps.
10. Add the coffee syrup (I made myself by dissolving 1 tbsp of espresso coffee powder in 1 tbsp of hot water), and almond milk. Mix until well incorporated.
11. The cake is ready to assemble and frost.

Amazingly Rich Chocolate VEGAN Celebration Cake | Cupcake Jemma

It's the last Vegan recipe in this series and it's a big one! This is such a naughty cake for all of those chocoholics out there who need to get their plant-based cake on.

Recipe -

480ml soya milk (unsweetened)
2tps apple cider vinegar
240g sunflower or other vegan spread
400g caster sugar
1 tsp vanilla extract
430g self raising flour
60g cocoa powder
1 tbs baking powder
1 tsp bicarbonate of soda
1/4 salt

Ingredients:
For the crust:
1 cup (125g) Walnuts
200g (7oz) Madjool dates, pitted
2 tablespoons (10g) desiccated coconut
1/4 teaspoon Salt
1 tablespoon coconut oil
For the filling:
2 cups (300g) Raw cashews
1/2 cup (160g) Maple or agave syrup
2 tablespoons Lemon juice
Zest from 1 lemon
1 teaspoon Vanilla extract
400g (14oz) Full fat coconut milk, refrigerated
250g (9oz) Blueberries, fresh or frozen

Directions:
1. Place the cashews in a large bowl, cover with water and let soak overnight.
2. Make the crust: To a food processor add walnuts and process until finely ground. Add dates, desiccated coconut, salt and coconut oil. Process until sticky dough is formed. Press the mixture into bottom of a 8-inch (20cm) springform pan. Refrigerate while making filling.
3. Make the filling: drain the soaked cashews and add to a high powered blender or food processor, then add blueberries and blend/process for 2-3 minutes. Add maple syrup, lemon juice, lemon zest, vanilla extract and coconut milk. Blend/process until very smooth and creamy, about 2-3 minutes (scrape the sides of the blender as needed). Pour the filling into the pan and spread evenly. Refrigerate overnight or until fully set. Decorate with blueberries.

Notes:
• To get creamy solid coconut milk, it is important to store to coconut milk a few hours in the fridge before the use.
• You can refrigerate the cake or keep in the freezer (the cake will be more stable), if you store the cake in the freezer, make sure you taking out the form the freezer 20-30 minutes before serving.

-2 tsp baking powder
-1/2 tsp salt

This is a VERY OLD DAIRY-FREE chocolate cake recipe. It's been around a 100 years.
I did NOT make this recipe, and I advise you to read below BEFORE
starting this recipe.

This is an old recipe and technique that goes way back, it's an easy
recipe and it also contains NO eggs and NO milk.

This is a very old recipe that was used 50 years ago, it contains vinegar, and it CAN be overwhelming in this recipe.
You may encounter a sour taste.

Many of you will find the recipe OK, but many find it sour.

Some of you will be curious to how people make this cake many years ago and wish to try it.
You can lower the amount of vinegar and baking by half and try it this way.

Vegan Chocolate Cake - No Butter, No Egg Cake Recipe - My Recipe Book By Tarika Singh

Learn how to make Vegan Chocolate Cake at home that's absolutely butter free and egg free and yet tastes divine.

Food blogger Tarika Singh brings you a vegan chocolate cake recipe that's extremely simple and easy to put together. This cake isn't too sweet on its own, so the dark chocolate glaze over it, sweetened with icing sugar hits just the right sweet notes.

Ingredients:

For the cake:
1 cup warm water (lukewarm, not boiling)
1/2 cup unsweetened cocoa powder (extra for dusting pan)
1 1/2 cups (180 grams) all-purpose flour
1 cup caster sugar (160 grams)
3/4 tsp. baking soda
1/2 tsp. salt
1/2 cup canola oil (or any other neutral-flavored oil, plus extra for greasing pan)
1 tbsp. vanilla extract
2 tsp. white vinegar

For the glaze:
50 grams dark chocolate chopped
1/3 cup icing sugar, sifted
2 Tablespoons water

Method:

To make the cake:
- Pre-heat the oven to 190 degrees Celsius.
- Use an 8-inch, removable bottom pan and line the bottom of the pan with parchment paper.
- Lightly brush the pan and parchment paper with oil & dust with cocoa powder.
- In a small bowl, whisk together the cocoa powder & lukewarm water, making sure that there are no lumps left and set aside.
- In a large pan, whisk together the flour, sugar, baking soda & salt.
- Make a well in the centre of these dry ingredients and add the cocoa-water mixture, oil & vanilla extract. Whisk until smooth. Add the vinegar & whisk.
- Transfer the batter to prepared cake pan & bake for about 30 to 40 minutes or until a skewer inserted in the centre of the cake comes out clean.
- Once baked, place the pan on a wire rack to cool for 20 minutes.
- Run a knife around the sides of the pan before loosening the sides of the pan.
- Open up the cake pan and gently place the cake on a wire rack to cool completely.

To make the chocolate glaze:
- Melt the chocolate either in a double boiler or in the microwave. - Allow it to cool slightly and then whisk in the water & sifted icing sugar.
- Once this mixture takes on a spreadable consistency, pour it over the centre of the cooled cake.
- Use an offset spatula to spread the glaze evenly over the top and sides of the cake.

Here is my take on Vegan Chocolate Cake and this according to me is the best vegan cake recipe you'll ever need. Its rich, moist, chocolaty and super delicious. Try it even if you are not a vegan!

IMP NOTE: I forgot to show when I added the Vinegar and the Vanilla.

INGREDIENTS

Vegan Chocolate Cake:

200 grams ( 1.5 cup ) All purpose Flour
28 grams ( 1/4 cup ) Cocoa powder
1/2 tsp salt
1 tsp Baking Soda
200 grams ( 1 cup) Granulated Sugar
120 ml ( 1/2 cup ) Vegetable oil

1 tsp Instant Coffee Powder
1 tbsp White Vinegar
1tsp Vanila Extract

IMP NOTE: I forgot to show when I added the Vinegar and the Vanilla.
Add it along with the wet ingredients.

250 grams Chopped Chocolate
180ml (3/4 cup) Coconut Cream

Garnish

Strawberries
Melted Chocolate

Easy Vegan Cake Recipe | CHELSWEETS

I’ve shared a ton of different cakes over the years, but all of them use dairy! This is the only recipe I’ve ever I’ve ever shared that is vegan! No eggs, no butter, no buttermilk!! It uses vegetable oil in place of the butter, and almond milk in place of the buttermilk. I really love this recipe because it’s straight forward, doesn’t include any scary ingredients, and most importantly, it tastes great!
