Chili garlic oil is also becoming a trend nowadays. Many people are venturing into making this condiment. Instead of buying a bottle for a hundred, you can actually make this chili garlic oil at home. This oil, which is commonly red in color, is made from vegetable oil infused with chili peppers and garlic. It is commonly used in Chinese cuisine and in East and Southeast Asia. In the Philippines, chili garlic oil is best paired (and commonly used) with siomai with toyomansi! I bet you have tried in when buying siomai from a food cart. Yum! It can also be used as dip for other delicacies and a good accompaniment for almost every dish.

CHILI GARLIC OIL INGREDEINTS:

1 3/4 C Vegetable Oil
1 C Garlic, finely chopped
1/2 C Fresh Red Chili, chopped finely or use a food processor
1/4 C Dry Red Chili, crushed
1 tsp Smoked Paprika or you can just use Paprika
2 tbsp White Sugar
2 tbsp Calamansi juice
1 1/2 tbsp Salt, I forgot to mention in the video.

Who doesn't love Chili Garlic Sauce? It is a perfect dipping sauce for Siomai, fishball and even fishes too. Can be added also into your soups and broths which will make your dish completely spicy and garlicky.

Soak the red Chillies in hot water for 4 hrs to overnight

How To Make Proper Chili Oil (Chinese Style)

Chili Oil is great on dumplings and all. But there is a massive difference between from scratch homemade chili oil, and store bought. When I say massive, I mean MASSIVE. This stuff is so easy to make and really only takes a few minutes of active time. So if you're not making your own chili oil at home yet, it's time to start. And keep that bad boy stocked up

(Heads up I know these spices are a tiny bit pricey, but each of these comes with a lot of spices so you can use them for a multitude of batches as well as lots of other things)

Sichuan Chili Flakes:
Black Cardamom:
Sichuan Peppercorns:
Black Vinegar:

Ingredients you'll need:
1 quart neutral oil (canola, peanut, etc.) *scroll to the bottom for notes
5 star anise
4 cloves garlic bruised left in their skins
2 tablespoons (10g) coriander seeds
1 cinnamon stick
1/3 cup (20g) Sichuan peppercorns
4 black cardamom
1 cup (110g) Sichuan chili flakes (or asian red pepper flakes)
1.5 teaspoon (10g) fine sea salt
1 tablespoon (14g) black vinegar

Easy to make Siomai Sauce!

========== SIOMAI RECIPE ============

Ingredients:
2 bulbs (whole) garlic
oil **preferrably olive oil
chili (10-20 pcs depending n your preference)
salt / soy sauce
magic sarap **any seasoning
**optional (sweet chilli sauce)

Directions:
1. Heat oil in the pan
2. Add the minced garlic and stir it constantly to avoid burnt parts. Just stir until the color turns to golden brown.
3. Then add the ground chili, be careful with your eyes. Make sure your cooking in medium heat
4. Season with magic sarap, salt/soysauce. Be careful not to burn the mixture.
5. Add 1 tbsp sesame oil. Stir.. Stir.. Stir...

Note: You have to take it our from the stove before the color changes to chocolate brown, since the oil is soo hot and it still keeps cooking the mixture.

**Optional, you can add 1 tbsp of sweet chili sauce for sweetness if you want.
