1 3/4 C Vegetable Oil
1 C Garlic, finely chopped
1/2 C Fresh Red Chili, chopped finely or use a food processor
1/4 C Dry Red Chili, crushed
1 tsp Smoked Paprika or you can just use Paprika
2 tbsp White Sugar
2 tbsp Calamansi juice
1 1/2 tbsp Salt, I forgot to mention in the video.

Chili Garlic Sauce - Siomai Sauce - Dimsum sauce

Easy to make Siomai Sauce!

========== SIOMAI RECIPE ============

Ingredients:
2 bulbs (whole) garlic
oil **preferrably olive oil
chili (10-20 pcs depending n your preference)
salt / soy sauce
magic sarap **any seasoning
**optional (sweet chilli sauce)

Directions:
1. Heat oil in the pan
2. Add the minced garlic and stir it constantly to avoid burnt parts. Just stir until the color turns to golden brown.
3. Then add the ground chili, be careful with your eyes. Make sure your cooking in medium heat
4. Season with magic sarap, salt/soysauce. Be careful not to burn the mixture.
5. Add 1 tbsp sesame oil. Stir.. Stir.. Stir...

Note: You have to take it our from the stove before the color changes to chocolate brown, since the oil is soo hot and it still keeps cooking the mixture.

**Optional, you can add 1 tbsp of sweet chili sauce for sweetness if you want.

Chilli Garlic Sauce
Recipe in English:

Ingredients:
-Sabut lal mirch (Button red chillies) ½ Cup
-Pani (Water) hot 1 Cup
-Lehsan (Garlic) cloves ½ Cup
-Sirka (Vinegar) 1 Cup
-Tamatar (Tomatoes) 2 kg
-Darchini (Cinnamon sticks) 1 large
-Laung (Cloves) 8-9
-Tez paat (Bay leaves) 2
-Namak (Salt) 1 tsp
-Cheeni (Sugar) or Brown sugar 1 Cup

Directions:
-In bowl,add button red chillies,hot water and soak for 20 minutes then strain.
-In chopper,add soaked button red chillies,garlic and chop well.
-Add vinegar,mix well & set aside.
-Cut tomatoes into cubes.
-In pot,add tomatoes,cinnamon stick,cloves,bay leaves,salt and mix well,cover and cook on low flame for 20-25 minutes or until tomatoes are soft.
-Remove cinnamon stick and bay leaves,pour whole mixture in a bowl and blend until fine puree then strain well though fine sieve.
-Put it on stove,in tomato puree,add blended red chilli mixture,sugar,mix well and bring it to boil and cook on medium to low flame until it thickens (approx. 35-40 minutes) and keep mixing in between (check by cold plate technique method) and cook for 8-10 minutes more to remove moisture and again check by cold plate technique method.
-Let it cool (yields: 1 litre chilli garlic sauce) and store in a dry & clean jar for up to 5-6 weeks in refrigerator.
-Chilli garlic sauce is ready.

Ajza:

-Bowl mein sabut lal mirch aur garam pani dal dein aur 20 minutes kliya bheego dein phir strain ker lein.
-Chopper mein soaked sabut lal mirch aur lehsan dal ker ache tarhan chop ker lein.
-Sirka dal ker ache tarhan mix karein & side per rakh dein.
-Tamatar ko cubes mein cut ker lein.
-Pot mein tamatar,darchini,laung,tez paat aur namak dal ker ache tarhan mix karein aur dhak ker halki ancch per 20-25 minutes ya tamatar naram hunay tak paka lein.
-Darchini aur tez paat ko nikal lein,saray mixture ko bowl mein dal dein aur ache tarhan blend ker lein yahan tak ka fine puree bun jaye phir fine sieve ki madad sa strain ker lein.
-Stove per rakh dein,tamatar puree mein blended lal mirch mixture aur cheeni dal ker ache tarhan mix ker lein aur ubal anay ka bad halki sa darmiyani ancch per garha hunay tak paka lein (approx. 35-40 minutes) aur bech bech mein chamcha chalatay rahein (cold plate technique method sa check ker lein) aur mazeed 8-10 minutes tak moisture kum hunay tak paka lein aur dubara cold plate technique method sa check ker lein.
-Thanda ker lein (yields: 1 litre chilli garlic sauce) aur dry & clean jar mein dal ker 5-6 weeks kliya refrigerate ker lein.
-Chilli garlic sauce tayyyar hai.

Super Hot Chili Garlic/Siomai Chili Sauce

How to cook Super Hot Chili Garlic/Siomai Chili Sauce

Ingredients:

250 g Garlic
250 g Chili Pepper
375 mL Vegetable oil
1 tsp Pepper
1 tsp Salt

Procedure:
1. Grind garlic and chili pepper in blender
2. Heat vegetable oil on pan
3. Put chili pepper in pan and stir in low heat
4. Add garlic the stir and stir in low heat until golden brown
5. Add more oil as desired
6. Add salt and pepper
7. Turn off fire, and let the remaining heat cook the chili pepper and garlic
8. Put into glass jar for packaging, Good for 3 bottles.

Chili garlic sauce is a Chinese chili sauces usually come as a thick paste, and are used either as a dipping sauce or in stir frying.

Ingredients :
1. Dried chili
2. Minced / chopped garlic
3. Cooking oil
4. Soy sauce
5. Magic sarap

Garlic sauce is a sauce prepared using garlic as a primary ingredient. It is typically a pungent sauce, with the depth of garlic flavor determined by the amount of garlic used. The garlic is typically crushed or finely diced. Simple garlic sauce is composed of garlic and another ingredient to suspend the tuber via emulsion, such as oil, butter or mayonnaise. Various additional ingredients can be used to prepare the sauce.
Garlic sauce can be used to add flavor to many foods and dishes, such as steak, fish, seafood, mutton, chops, chicken, eggs and vegetables. It is also used as a condiment.

Types

Agliata

Agliata is a savory and pungent garlic sauce and condiment in Italian cuisine used to flavor and accompany broiled or boiled meats, fish and vegetables. It is first attested in Ancient Rome, and it remains part of the cuisine of Liguria. Porrata is a similar sauce prepared with leeks in place of garlic.

Aioli
Aioli is a Mediterranean sauce made of garlic and olive oil; in some regions other emulsifiers such as egg are used. The names mean garlic and oil in Catalan and Provençal. It is particularly associated with the cuisines of the Mediterranean coasts of Spain (Valencia, Catalonia, the Balearic Islands, Murcia and eastern Andalusia), France (Provence) and Italy (Liguria).

Filfil chuma
Filfil chuma is a North African recipe from Libyan Jews that is made from sweet and hot pepper powder, heaps of ground garlic, caraway, and cumin. It is used as a dipping sauce much like in Ethiopian cuisine, as a marinade for meat, or as a base seasoning for things such as stew and sauces.

Honey garlic sauce

Honey garlic sauce is a sweet and sour sauce that tastes like a mix between honey and garlic, popular in Canada. Honey garlic is one of the many sauces put on chicken wings, ribs and other foods such as meatballs.

Mojo
In Cuban cuisine, mojo applies to any sauce that is made with garlic, olive oil or pork lard, and a citrus juice, traditionally bitter orange juice. It is commonly used to flavor the cassava tuber and is also used to marinate roast pork. Without oregano, the sauce is typically called 'mojito' and used for dipping plantain chips and fried cassava (yuca). To create the marinade for pork, the ingredients are bitter orange juice, garlic, oregano, cumin, and salt. Garlic is also used as an ingredient in other preparations of mojo in various cuisines.

Mujdei
Mujdei is a spicy sauce in Romanian cuisine made from garlic cloves crushed and ground into a paste, salted and mixed with water and vegetable oil. Sunflower oil is almost always used.

Skordalia

Skordalia is a thick puree (or sauce, dip, spread, etc.) in Greek cuisine made by combining crushed garlic with a bulky base—which may be a purée of potatoes, walnuts, almonds, or liquid-soaked stale bread—and then beating in olive oil to make a smooth emulsion. Vinegar is often added.

Ta'leya
Ta'leya is a garlic sauce in Egyptian cuisine made by frying garlic and adding vinegar and spices. It is used as an ingredient to add flavor to bamia and koshary.

Taratoor
Taratoor is a creamy garlic sauce in Arab cuisine of the Persian Gulf and French cuisine that is a predecessor to aioli. It was first prepared in the Greater Syrian region by peasants. It was later brought to the Iberian peninsula by Phoenicians, and was also brought to the Iberian peninsula at a later time by Arabs. From there, the sauce was brought to Southern France. Taratoor has been described as an integral part of the Arab Gulf countries' cuisines.

Tomato-garlic sauce
Tomato-garlic sauce is prepared using tomatoes as a main ingredient, and is used in various cuisines and dishes. In Italian cuisine, alla pizzaiola refers to tomato-garlic sauce, which is used on pizza, pasta and meats.

Toum
Toum is a garlic sauce common to the Levant. Similar to the Provençal aioli, it contains garlic, salt, olive oil or vegetable oil, and lemon juice, traditionally crushed together using a wooden mortar and pestle.

Sweet Chili Garlic Sauce
Made throughout Southeast Asia, this uses red chilies, garlic, vinegar, sugar syrup as the main ingredients, usually combined with a thickener like cornstarch.

Materials for packaging :
jar or bottles with cap (divisoria)
plastic sealer for cap (divisoria)

How to make chilli flakes and garlic chilli sauce

HOW TO MAKE CHILLI FLAKES & GARLIC CHILLI SAUCE
Ingredients
2 cups chilli flakes (whole Guntur dry chilies)
2 cups garlic chopped
3 tbsp vinegar
6 tbsp light soy + 3 dark soy sauce
2 tbsp oyster sauce
1 tsp chilli powder
1/2 Cup till oil
1 tsp salt

Directions
TO MAKE CHILLI FLAKES
-Dry roast red Guntur chillies, keep roasting in low flame, till its crisp & tends to break, then cool down
-Transfer to mixer jar ( make sure your mixer jar is completely dry)
-Pulse it 3-4 times to get a coarse mixture
-Store in a airtight container
-Use it whenever needed for pizza, pasta sauce

GARLIC CHILLI SAUCE
-Chop garlic using food processor
-Heat oil add chopped garlic sauté till golden brown
-Add chilli flakes fry till you get a smoked smell ( do not burn the chilies) switch off the heat
-Add mixed vinegar, dark & light soy sauces, Oysters sauce, salt, chili powder
-Return the wok/pan to the gas & bring in to a simmer stirring occasionally for 5 minutes
-Put off the heat, cool & store the
chilli Garlic sauce in a jar & refrigerate.
-You can stir in to Chinese dishes, pasta sauce, curries cause since tho chilli are roasted with garlic, this gives a nice aromatic chilli flavour to the dish.
