METHOD

1.First we need to make spice powder, for this we need
Coriander seeds - 3 teaspoon
Fennel seeds - 1 teaspoon
Caraway seeds - 1 teaspoon
Black peppercorns - 2 teaspoon
Cloves - 20
Cardamom - 12
Nutmeg - 1 small piece
Bay leaves - 2
Mace - small piece
Star Anise - 2
Black cardamom - 2
Cinnamon sticks - 20 small pieces
Grind it to a fine powder

2.For making biryani we need
Chicken - 1 kilo
For marinating we need
Special Ginger garlic paste - 3 tablespoon
Spice powder - 1 teaspoon
Yogurt - 300 gram
Lemon juice - 1 tablespoon
Cardamom powder - 1/2 teaspoon
Red chili powder - 1 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Fried and crushed onion - 2 medium sized
Few mint and coriander leaves
Crushed - green chilies - 1 tablespoon
Clarified butter - 1 tablespoon
Mix it well and marinate for an hour

3.Soak Basmati rice in water - 1 kilo

4.In a vessel heat oil - 5 tablespoon and add the marinated chicken and cook till it turns 80% tender

5.In another bowl add water - 3 to 4 liter and to it add
Salt as required
Cloves - 4
Cardamom
Cinnamon sticks - 5
Caraway seeds - 1/2 teaspoon
Cardamom - 3
Oil - 1 tablespoon
Mix it

6.Now add soaked rice and cook till 70% done

7.In a big bowl add rice layer then chicken layer so on as shown and garnish with fried onions,mint and coriander leaves,clarified butter,saffron soaked milk,garam masala powder etc

8.Then keep it under dum for 30 minutes under a tawa.

9.Serve hot with raita or brinjal chutney

World Famous Hyderabadi Chicken Dum Biryani | Restaurant Style Biryani Step By Step | Cook With Fem

Hyderabadi Biryani is of two types: the Kachchi (raw) Biryani, and the Pakki (cooked) Biryani.

So in this video I am going to show you how to make tasty Hyderabadi Chicken Dum Biryani at home or Restaurant
Style Chicken dum biryani in a simple and easy method.Keep watching.

1}LET'S BEGIN THE PROCESS.. (MARINATION)
--------------------------------------------------------------------------
1.First of all let's marinate chicken
CHICKEN - 1 Kilo/Kg or little more, size of chicken pieces must be medium to big.

INGREDIENTS (Required for marination)
----------------------------------------------------------------
Lime juice - 1 tablespoon
Yogurt - 300 gram
Ginger garlic paste - 2 tablespoon
Mint leaves and coriander leaves - few (a bunch each)
Fried onions of - 3 to 4 medium sized
Homemade garam masala powder - 1 1/2 teaspoon
Green chillies cut into small pieces or paste - 5 to 6
Turmeric powder - 1/2 teaspoon
Red chilli powder - 2 tablespoon
Salt - 1 tablespoon or as required
Oil - 1/2 cup or 60 ml

Add all the above ingredients into the chicken,and marinate it for
entire night or at least for 3 hours.

{2}.BASMATI RICE PREPARATION
----------------------------------------------------
1.Wash and soak 1 kg Basmati rice in water for an hour or 30 minutes
2.Then boil 5 liters of water to it add

Cinnamon - 3 sticks
Cardamom - 4
Caraway seeds/shahzeera - 1 teaspoon
Cloves - 6
Salt - 3 1/2 tablespoon
Oil - 3 teaspoon
Half a lemon juice
Green chilies - 5
Few mint and coriander leaves
3.Now add the soaked Basmati rice and mix well.
4.Let the rice gets cooked till it is done up to only 70%
5.Drain the water from the cooked rice and keep it separately.

3}.LAYERING PROCESS
-----------------------------------
1.To the marinated chicken add a layer of cooked rice and garnish it with few fried onions,
coriander and mint leaves,soaked saffron milk, fried cashews, few pinches garam masala powder and cardamom powder, clarified butter
2.Then place another layer of rice on this and again add coriander and mint leaves
fried onions,saffron milk,clarified butter - 4 tablespoon,fried cashewnuts - 20 grams.

{4}.SEALING METHOD
--------------------------------
1.Take the lid of the biryani vessel to it fix Aluminium foil and place it on vessel
so that it gets sealed well and the steam does not come out.

{5}.DUM METHOD
-------------------------
1.Mostly dum is done using charcoal but as this is homemade we have to place the biryani vessel on an old
pan ,first place an old pan on stove let it heat for 3 minutes then place the vessel and let the flame be
high for 5 minutes then lower the flame and let the vessel stay on pan for 30 to 40 minutes.

Hyderabadi Biryani recipe - Hyderabadi Biryani is also known as Pakke Murgh ki biryani. Chicken is cooked and layered with rice and then cooked together on dum in a sealed pot.

Learn how to make Hyderabadi biryani in this recipe video. Among all the biryani, Hyderabadi biryani is the most popular biryani. No doubt this biryani has the most amazing flavors and the aroma coming from Hyderabadi biryani is heavenly.

The secret to making good Hyderabadi biryani lies in the selection of spices. There is a good balance of flavors and it involves the popular cooking technique called dum pukht. It means slow cooking of rice and chicken in a sealed pot. This increases the flavor and aroma of biryani.

Ingredients to make Hyderabadi chicken dum biryani:
500 gm Chicken, cut into cubes
1.5 cup Basmati rice
To make fried onions:
3 medium-size onions, sliced
To marinate the chicken:
1 tbsp ginger garlic paste
1 tsp red chili powder
1/2 tsp turmeric powder
Salt to taste
1.5 tsp biryani masala powder
1-inch cinnamon sticks, 1 tsp caraway seeds, 6-7 cloves, 5 green cardamom
2 tsp lemon juice
1/4 cup coriander leaves, chopped
2 tbsp Mint leaves, chopped
4 green chilies, slit
1 Cup Curd/Yogurt
1/4 cup oil (same oil that we used to fry onions)
3/4 cup fried onions
To make potli masala:
1-inch cinnamon sticks,
1 black cardamom,
10 peppercorns,
1 petal javitri (mace),
2 green cardamom
Whole spices to be used for cooking the chicken:
1 bay leaf,
1 petal javitri,
1-star anise,
1 black cardamom.
To layer the biryani:
Fried onions
1/2 cup Coriander leaves
1/4 cup Mint leaves
Saffron milk - Soak 1/2 tsp saffron in 1/4 cup hot milk
Kewra essence - 3-4 drops mixed in water.
3 tsp Ghee/clarified butter
Orange food color (optional)
2-3 tsp Biryani masala powder

How to make Hyderabadi chicken dum biryani recipe:
1. Wash & soak 1.5 cup basmati rice in water for 30 minutes.
2. Making fried onions - Heat oil and fry sliced onions.
Once the onions are light golden take it out. Spread it on a plate.
3. Marinate the Chicken - In a mixing bowl take the chicken and all the ingredients mentioned under to marinate the chicken. Mix it well. Cover & keep it aside. Marinate for 30 minutes to an hour.
4. Making potli masala for Hyderabadi biryani:
Take 1-inch cinnamon sticks, 1 black cardamom, 10 peppercorns, 1 petal javitri & 2 green cardamoms. Tie this on a muslin cloth.
Potli masala is ready.
5. Heat 1 tbsp ghee/clarified butter. Add whole spices: 1 bay leaf, 1 petal javitri, 1-star anise, and 1 black cardamom. Saute for a minute.
6. Add marinated chicken. Cook, it uncovered for 4-5 minutes. Cover & cook till chicken is completely cooked.
7. On another burner keep a vessel filled with 6 cups of water. When water boils add potli masala and salt. Add rice to the boiling water.
8. After 5 minutes press the rice grain. It should split and not be mushy.
9. Discard the potli masala and drain off the excess water from the rice. Rice to make Hyderabadi chicken biryani is ready.
10. Check the chicken and if the chicken is cooked. Switch off the flame.
11. Start layering the Biryani- Remove half of the chicken from the gravy.
12. Layer over it - Fried onions, Coriander leaves & Mint leaves.
13. Layer half of the biryani rice. Spread Fried onions, Mint leaves, Coriander leaves, Biryani Masala powder, Saffron milk.
14. Layer rest of the chicken with the gravy on it. Spread again Fried onions, Coriander leaves.
15. Layer the remaining rice & spread it evenly. Over it put Saffron milk, Kewra water, Orange food color, Biryani masala powder, Fried onions, Coriander leaves, Mint leaves & Ghee/clarified butter.
16. Seal it with wheat flour dough. Cover with the lid.
17. Place iron Tawa. Keep the biryani pot over it. Switch on the flame.
18. Keep the flame on medium for 5 minutes. Lower the flame and cook it for 20 minutes. Biryani is ready. Switch off the flame.
19. Open the seal when you are ready to serve the biryani.
The heavenly aroma of biryani is just amazing.
Rice is cooked well & all the colors of biryani are visible.
20. Serve Hyderabadi biryani hot with raita, onion slices, and a lemon wedge.

Hyderabadi Chicken Dum Biryani - Hyderabadi biryani is a form of biryani, from Hyderabad, India.
It is prepared in the form of kachay gosht ki biryani and dum ki biryani.
Biryani is considered to be a dish of Indian origin,more prominently considered to be dish of Nizam (Ruler of the state of Deccan). Hyderabadi biryani originated as a blend of Mughlai and
Iranian cuisine in the kitchens of the Nizam, rulers of the historic Hyderabad State.Hyderabadi Biryani is also a staple part of Pakistani Cuisine due to its exotic flavor and aromatic taste.

Hyderabadi Biryani is of two types: the Kachchi (raw) Biryani, and the Pakki (cooked) Biryani.

Kachche gosht ki biryani
The Kachchi biryani is prepared with meat/Chicken marinated with spices overnight and then soaked in yogurt before cooking.
The gosht (meat/chicken) is placed below layers of fragrant long-grained basmati rice,and cooked on dum (steaming over coals),
after sealing the handi (vessel) with dough. This is a challenging process as it requires meticulous attention
to time and temperature to avoid over- or under-cooking the meat.

Oil - 1/2 cup or 60 ml

Add all the above ingredients into the chicken,and marinate it for

1.Take the lid of the biryani vessel to it fix dough on the sides and place it on vessel
so that it gets sealed well and the steam does not come out.

{5}.DUM METHOD

1.Mostly dum is done using charcoal but as this is homemade we have to place the biryani vessel on an old
pan ,first place an old pan on stove let it heat for 5 minutes then place the vessel and let the flame be
high for 10 minutes then lower the flame and let the vessel stay on pan for 30 minutes.

Turmeric powder - 1 teaspoon
Red chili powder - 2 teaspoon

Garam masala powder - 2 teaspoon
Oil - 5 tablespoon
Clarified butter - 5 tablespoon
Basmati rice - 1 kilo
Cloves - 10 to 12
Cardamom - 6 to 8
Cinnamon sticks - 5 to 6
Caraway seeds - 1 teaspoon
Red food color - few pinches
Green food color - few pinches
Milk - 1/2 cup
Tomatoes - 4
Lemon - 2
Few nuts - Almonds, pistachio and cashews

Hyderabadi Chicken Dum Biryani Recipe / How to make Chicken Dum Biryani at home

In this video we will see how to make chicken dum biryani at home. This chicken dum biryani is made in hyderabadi style, the chicken pieces are fist marinated in the spice mix and are then layered with partially cooked rice. Then the vessel is sealed with dough to lock in all the flavor from the chicken pieces. Now the chicken pieces are going to be slowly cooked and the rice ends up being so flavorful. That is the specialty of perfect chicken dum biryani. This dum biryani can be served with raita and it will taste absolutely divine.

Ingredients :

For marinating the Chicken :
- Chicken - 1 kg
- Salt - 1/2 tablespoon
- Red Chilli Powder - 4 tsp
- Coriander powder - 4 tsp
- Ginger garlic paste (thin) - 3 tsp
- Green cardamom powder (only seeds & strained) - 1 tsp
- Shahjeera (Caraway seeds) - 1 tsp
- Cloves (Laung) - 10 pcs
- Cinnamon (Dalchini) - 8 nos
- Fried Onions (Birista), crushed - 5 tbsp or 4 medium onions
- Coriander leaves, chopped - 1/2 cup
- Mint leaves (Pudina), chopped - 1/2 cup
- Green chillies, slit till half length - 4 nos
- Beaten/ whisked curd - 7 tbsp
- Oil (in which onions were fried), cooled - 1/2 cup

For Rice & Dum layering :

- Basmati Rice - 750 gms
- Shahjeera (Caraway seeds) - 1/2 tsp
- Green cardamom - 4
- Cloves - 4
- Cinnamon- 4 pieces
- Salt- 2 1/2 tablespoon
- Saffron strands soaked in warm milk
- Water to boil the rice- around 2 litres
- Onions, sliced fine & fried crisp ( birista) - 1 medium
- Mint leaves - around 10- 15 leaves
- Water to be taken out after boiling rice - 1/2 cup
- Ghee- 1 tsp
- Aluminum Foil to seal for Dum cooking

Preparation :

Marinating the chicken:-

- Slice 5 medium onions & fry in oil till golden (birista). Remove & once cool, crush it with your hands. Take out a handful
- Cool and reserve 1/2 cup of this oil that was used for frying the onions.
- Take out seeds from around 15 green cardamoms. Make a powder of it and strain it to give 1 tsp powder.
- Chop 1/2 cup coriander leaves and 1/2 cup mint leaves & slit the 4 green chillies till half the length.
- Marinate the chicken with the items specified above. Mix well & set aside for 2 hrs.

30 mins prior to cooking the rice:-

- Wash & soak the Basmati Rice for 30 mins.
- Take 1/2 cup of warm milk & soak few strands of saffron. Mix it with a spoon.
- Take out around 15 mint leaves (pudina).

Cooking the rice:

- In a pan/pot add around 2 litres of water to cook the rice. Place it on high heat.
- You may include the water in which rice was soaked in this 2 litres for enhanced flavour & taste.
- While the water is coming to a boil, add Shah Jeera - 1/2 tsp, Green cardamom - 4, Cloves - 4, Cinnamon- 4 pieces, Salt- 2 1/2 tablespoon (two and half tablespoon)
- Stir it well to dissolve the salt completely. The water must be very salty, like seawater.
- Once the water is boiling add the strained basmati rice & stir it well.
- Continue to boil it on high heat, stirring few times very gently to not break the rice.

Layering for cooking on Dum:

- Take the heavy bottom vessel and arrange the marinated chicken pieces in one layer, not leaving any gap. Pour the entire marinade, coating all the chicken pieces.
- Once the rice is half cooked (should take about 5 mins on high flame), scoop the rice with the slotted ladle & spread it on the arranged chicken in the vessel for Dum. Continue doing that till half of the rice is done.
- Now sprinkle saffron milk first on the rice in a circular motion, next half of the birista & whole of the mint leaves.
- Spread out the balance rice as a second layer on top of the 1st layer of rice. You can strain the rice if it’s easier for you and then spread on top. But don’t discard the water. Strain the water in a bowl.
- Lastly take out 1/2 cup of the hot rice water & add 1 tsp ghee in it. Mix it well & pour it uniformly on the rice.
- Now, seal the Dum vessel with aluminum foil to cover it completely and seal the edges. Place the lid on top.
- Place this pot directly on high flame for 10 mins. Place a 2nd bowl filled with water on top of the vessel for weight.
- After 10 mins, place a heavy bottom Tawa on the flame shift the Dum vessel onto the Tawa.
- Lower the flame & cook on DUM for 35 mins.
- Switch off the flame and let the Biryani rest for 15-20 mins before opening the cover and seal.
- Turnover the top layers of rice to mix the Biryani and get to the chicken pieces at the bottom.
- Serve with Mirchi ka Salan and Raita.
