Ingredients:
For Mutton:
Red chilly powder - 3 tbsp
Turmeric/Haldi Powder- 1 tsp
Salt to taste
Lemon juice - 3 pcs
Coriander/Dhaniya & Mint/Pudina Leaves
Ginger Garlic Paste - 3 tbsp
Pure Ghee
Curd/Dahi - 500 gms

For Garam Masala Powder:
Choti Elaichi - 1 tbsp
Shah Zeera - 1 tbsp
Dal Chini/Cinnimon sticks - 1 tbsp
Lavang/Cloves - 10-12 pcs

Golden fried Onion - 2 pcs (chopped)
Mutton 3 kg

For Rice:
Extra long basmati rice - 1.25 kg
Dal Chini/Cinnimon sticks - 7-8 pcs
Lavang/Cloves - 6-7 pcs
Choti Elaichi - 10-12 pcs
Lemon juice - 1 pcs
Pure Ghee - 2 tbsp

Saffron/Zaffran/Kesar - 1/2 tsp
Kevda Water - few drops
Garam Masala powder - 2 tsp
Saffron milk - 1.5 cup

Hyderabadi Mutton Dum Biryani - Hyderabadi biryani is a form of biryani, from Hyderabad, India.
It is prepared in the form of kachay gosht ki biryani and dum ki biryani.
Biryani is considered to be a dish of Indian origin,more prominently considered to be dish of Nizam (Ruler of the state of Deccan). Hyderabadi biryani originated as a blend of Mughlai and
Iranian cuisine in the kitchens of the Nizam, rulers of the historic Hyderabad State.Hyderabadi Biryani is also a staple part of Pakistani Cuisine due to its exotic flavor and aromatic taste.

Hyderabadi Biryani is of two types: the Kachchi (raw) Biryani, and the Pakki (cooked) Biryani.

Kachche gosht ki biryani
The Kachchi biryani is prepared with meat/Chicken marinated with spices overnight and then soaked in yogurt before cooking.
The gosht (meat/chicken) is placed below layers of fragrant long-grained basmati rice,and cooked on dum (steaming over coals),
after sealing the handi (vessel) with dough. This is a challenging process as it requires meticulous attention
to time and temperature to avoid over- or under-cooking the meat.

{1}LET'S BEGIN THE PROCESS.. (MARINATION)
--------------------------------------------------------------------------
1.First of all let's marinate mutton
Mutton - 650 gram, mutton pieces must be medium to big.

INGREDIENTS (Required for marination)
-------------------------------------
Lime juice - 3 teaspoon
Yogurt - 200 gram
Ginger garlic paste - 4 teaspoon
Mint leaves and coriander leaves - few (a bunch each)
Fried onions of - two medium sized onions
Homemade garam masala powder - 1 teaspoon (link for this garam masala powder is below)
Cumin powder - 1/2 teaspoon
Coriander powder - 1teaspoon
Green chilies crushed - 4
Black pepper powder - 1/2 teaspoon (optional)
Turmeric powder - 1/2 teaspoon
Red chili powder - 1 teaspoon
Salt - 1 & 1/2 teaspoon
Oil - 4 tablespoon
Raw papaya paste - 1 teaspoon

Add all the above ingredients to mutton pieces,and marinate it for
entire night or at least for 3 hours.

{2}.BASMATI RICE PREPARATION
----------------------------------------------------
1.Wash and soak 1/2 kg Basmati rice in water for an hour.
2.Then boil 4 litres of water to it add

Cinnamon - 3 sticks
Cardamom - 4
Caraway seeds/shahzeera - 1teaspoon
Bay leaves - 3
Cloves - 6
Salt - 4 teaspoon
Oil - 3 teaspoon
Lemon juice - 1 teaspoon
3.Now add the soaked Basmati rice and mix well.
4.Let the rice gets cooked till it is done up to only 70%
5.Drain the water from the cooked rice and keep it separately.

{3}.LAYERING PROCESS
-----------------------------------
1.To the marinated mutton add a layer of cooked rice and garnish it with few fried onions,
coriander and mint leaves,soaked saffron milk,fried cashews
2.Then place another layer of rice on this and again add coriander and mint leaves
fried onions,saffron milk,clarified butter, fried cashew nuts

{4}.SEALING METHOD
--------------------------------
1.Place Aluminium foil on the vessel
so that it gets sealed well and the steam does not come out.

{5}.DUM METHOD
-------------------------
1.Mostly dum is done using charcoal but as this is homemade we have to place the biryani vessel on an old
pan ,first place an old pan on stove let it heat for 5 minutes then place the vessel and let the flame be
high for 10 minutes then lower the flame and let the vessel stay on pan for 30 minutes.

Easy and delicious MUTTON BIRYANI recipe!
The name of Mutton Biryani is enough to let us into imagining the amzing taste it has. The aroma, the spices, Oh my, I am tempted. Did you know that Biryani was brought down to us by the persians? Many believes that it origininated in persia and was brought down by the Mughals. One such theory is that the Biryani is the crown dish of the Hyderabdi Muslims. No matter who brought it down, it truly satisfies our tastebuds! The perfectly spices mutton chunks and the aptly cooked rice emanacating the aroma is sure to get our tastebuds tickling. It looks difficult but there is super easy and delicious on how way to cook Mutton Biryani. So let’s get started with the easy and delicious way og cooking Mutton Biryani!

Prep time: 30-40 mins
Cook time: 45-60 mins
Serves: 4 People

Ingredients:
1. Mutton: 500gms
2. Basmati rice: 500gms
3. Curd: 200gms
4. Onion: 2pc(medium cut)
5. Ginger-garlic paste: 3tbs.
6. Salt: 2tbs.
7. Red chili powder: 1 ½ tbs.
8. Coriander powder: 2tbs.
9. Turmeric powder: 1tbs.
10. Mutton masala: 1 ½ tbs.
11. Garam masala: 1tbs.
12. Tomato: 2pcs(fine chopped)
13. Green chili: 4pcs
14. Mint leaves: a handful(for garnish)
15. Fresh coriander: a handful(for garnish)
16. Crispy fried onions(for garnish)
17. Bay leaves: 4pcs
18. Cumin seeds: 2tbs.
19. Black pepper: 1tbs.
20. Cinnamon stick: 1inch
21. Clove: 7-8pcs
22. Mace: 2pcs
23. Green cardamom: 4pcs
24. Black cardamom: 2pcs
25. Mustard oil: 100gms(for mutton)
26. Refined oil: 100gms(for rice)
27. Food colors: 2(red/yellow)
28. Kewda water: 2-3tbs (for fragrance)
29. Desi ghee: 2-3tbs.


Method:

Step 1.
Marinate mutton.

In a medium bowl take mutton and wash it properly. Add 1 ½ tbs ginger-garlic paste, 2tbs coriander powder, 1tbs turmeric, 1tbs garam masala, 1 ½ tbs red chili powder, 1 ½ tbs mutton masala, 1tbs salt, ½ tbs cumin seeds, ½ tbs black pepper, 4 cloves and 200gms curd. Mix it well so that the mutton is marinated properly and set aside for 20mins.

Step 2:
Preparing the rice.

Take a deep kadhai and put it on gas stove and pour refined oil and heat it up. Add the dry spices, cumin seeds, 2-3 cloves, 2 bay leaves, 3-4 green cardamom and fry till they are aromatic.
Add black pepper. When the dry spices start to crack add the basmasti rice (soak it before hand for 15-20mins)
Mix the rice with the spices well and cook for 1-2mins. Add 1tbs salt to it and mix.
Add around 1.5L of water and let it boil. Once it starts to boil cover it with a lid and cook.

Step 3.
Cooking the Mutton.

(Mutton takes time to cook, therefore we have used pressure cooker to cook it so as to save time)
Turn on the gas stove and place the pressure cooker and pour mustard oil in it and heat it up. Add the dry spices, cumin seeds, mace, 2 bay leaves, cinnamon stick and black cardom(smashed) and fry. When the spices starts being aromattic and add chopped onion and fry till they turn translucent.

(Meanwhile check on the rice, if its done turn off the gas and drain it)


Add 1tbs ginger-garlic paste to the fried onion and fry till they are golden brown. Add the chopped tomatoes and green chili and fry.
Now, you would see the masala is cooked well, so time to add the mutton. Mix the mutton well with the masala and cover with the lid and cook for 1-2 mins till it has pressure.
Now turn the flame lower and cook for more 15-20 mins. After that turn off the gas and let it rest inside the pressure cooker for it to release the pressure.

Step 4:
Cooking the mutton and rice together.

Now, transfer the mutton to a deep kadhai so we can cook it with the rice, you can cook in the pressure cooker as well if you have a lid that covers it best.
Layer the mutton with the cooked rice in an even way. Add the crispy fried onion, chopped mint leaves, coriander leaves. Drizzle few drops of both the food color evenly.
Add the Kewda water as well and lastly add 2-3 spoonfull of Desi Ghee.


Now, cover with the lid and turn the gas on and cook for 5 mins on a high flame.
After 5mins lower the gas flame and cook for more 15mins. After 15mins turn the gas off and let it rest for 10 mins.

Now, its time to open the lid. Open the lid and start serving this appetizing Mutton Biryani with garnish of Crispy friend onions, fresh coriander leaves.

I told it looks delicious but is super easy to make. Now make your family happy and tempt them with this amazing and super easy Mutton Biryani. Happy Cooking!

Note:
1. Wash the mutton nicely to remove any waste.
2. We have used a presuure cooker as mutton takes time to cook.
3. Using dry spices always makes it more delicious.
4. Use 1-2 food colours for an appealing look of the biryani.
5. Make sure not to burn the masala.

Learn how to make Mutton Biryani recipe. In this mutton dum biryani recipe video tutorial, I have included all the steps in detail on how to make yummy biryani in an easy way.

I have layered the biryani in a heavy bottom pan to cook it on Dum. Always use a heavy bottom vessel/nonstick pan for dum cooking the biryani. Always Dum cook the biryani on slow heat (lowest flame).

Ingredients for making Mutton Biryani:
For marinating the mutton:
500 gms Mutton (tender meat)
3/4 Cup Curd/Yogurt
1 Lemon (juiced)
Salt as per taste
2 tbsp Ginger Garlic Paste
1/4 tsp Turmeric Powder
1 tsp Red Chili Powder
1/4 tsp Cumin Powder
1/2 tsp Coriander Powder
1 tbsp Biryani Masala Powder
Whole Spices
5 Cloves
1 Black Cardamom
2 inch Cinnamon sticks
1 Black Stone flower
1 tsp Caraway Seeds
2 Green Cardamom
1 Star Anise
1 tsp Black pepper corns
2 small Bay leaf
1/4 Cup Coriander Leaves (chopped)
2 tbsp Mint Leaves (chopped)
4 tbsp Ghee/Clarified Butter

To Pressure cook the meat for making Biryani recipe:
3 Slit Green Chilies
2 Tomato (Puree)
1 Cup Water

For making the Biryani rice:
2 Cup Basmati rice
7 Cups of Water
Whole Spices
2 small Bay leaf
1 tsp Caraway Seeds
2 Green Cardamom
1 Star Anise
1 Black Cardamom
1 inch Cinnamon Sticks
4 Cloves
2 tsp Ghee
Salt as per taste

Other ingredients for making mutton Biryani:
3 medium size Onions (For making Fried Onions)

For layering the Biryani:
a pinch of saffron soaked in 1/4 Cup of warm milk
2 tbsp Coriander leaves
1 tbsp Mint leaves
1 tsp Orange food color soaked in kewra water

How to make Mutton Biryani recipe step by step:
1) Marinate the meat with curd/yogurt, lemon juice, salt, ginger garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, biryani masala powder, whole spices, coriander leaves, mint leaves, ghee/clarified butter. Mix it well and cover it. Keep it marinated for 30 minutes to 1 hour.

2) Heat oil in a pressure cooker. Add sliced Onions. Fry it till they are light golden in color. Remove half of the onions and keep it on a kitchen tissue.

3) Add the marinated meat to the rest of the Onions. Mix it well. Add slit green chilies and tomato puree in it. Cook it for about 5 minutes. Close the lid of the pressure cooker and cook for 4 whistles.

4) Till the meat is getting pressure cooked, we will prepare rice for making mutton biryani. On another burner, heat a vessel with water in it. Add salt, ghee/clarified butter, and whole spices. Let the water come up to a boil.

5) When the water comes to a boil add the drained rice. Cook it till 80% done. Remove and keep it aside.

6) After 4 whistles let the pressure of the pressure cooker settle down on its own. After that open the lid and check whether the meat is cooked. If yes, then start layering the mutton biryani and, if not, then pressure cook for 2 more whistles.

7) To layer the mutton biryani, take a heavy bottom pan or a non-stick pan. Place it over a tawa. Apply some oil on it. Layer the meat first. Over it layer the rice. Now over it sprinkle fried onions, chopped coriander and mint leaves, saffron milk, orange food color mixed in kewra essence, biryani masala powder and ghee/clarified butter.

8) Now put a tight-fitting lid or put a plate and over it put some weight on it. Cook the meat on Dum for 20 minutes. Switch off the flame.

9) Check at the bottom if the gravy is dried up completely, Mutton Biryani is ready to serve.

10) Serve Mutton Biryani with Raita and Salad.

Notes:
Use tender meat to make mutton biryani.
Do not cut the quantity of ghee/clarified butter in the recipe while marinating it. It tenderizes the meat while making mutton biryani.
If possible at least marinate for 1 hour.
Use fresh curd. If curd is sour do not add lemon juice to the recipe.
Adjust the spices as per your taste. If you prefer less spicy then cut down the quantity of red chili powder and green chilies in the recipe.

Easy Chicken Biryani Recipe | चिकन बिरयानी बनाने का सबसे आसान तरीका | Chicken Biryani

Here I present the most easiest and simplest way of making chicken biryani without any fanfare.

Chicken biryani is a blend of fragrant rice, aromatic spices, caramelized onions and juicy well marinated chicken.This recipe is a life saver if you expect any last moment guests. I would definitely say this is a must try recipe at home and guarantee you will get lot of praises for this super delicious Chicken Biryani :)

Ingredients :
For Rice:-
200 gms Basmati rice
1 litre water
1 Bay leaf
2 green Cardamom
1 black Cardamom
1 inch Cinnamon
2-3 Cloves
1 tbsp Ghee/ Oil
5-6 Black pepper
Salt as per taste

For Marination:-
600 gms Chicken
200 gms Curd
1 tbsp Ginger Garlic paste
1 tsp Chilli powder
1 tsp Turmeric powder
3 Green Chilli
1/2 tsp Biryani masala/ Chicken masala
1 Large Tomato finely chopped
2 tbsp Mint leaves
Salt as per taste

For fried onions:-
Oil for deep frying
2 Large Onions

For cooking:-
1 tbsp oil
1 tbsp Ghee
2 pinch Saffron soaked in milk
2 tbsp mint leaves
Whole spices (cloves , cinnamon, cardamom, black pepper, bay leaves)

Garnish:-
Fried onions
Mint leaves

Ingredients

1.Marinate The Chicken -

1 Kg -Chicken (चिकन)
2Tbso - Ginger Garlic Paste (अदरक लहसुन का पेस्ट)
2Tbsp- Kasmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर)
100 gm - Fresh Curd (दही)
1Tbsp- Coriander Powder (धनिया पाउडर)
1/2Tsp- Pepper Powder (काली मिर्च पाउडर)
1Tsp- Salt(नमक)
2 Tbsp- Biryani Masala(बिरयानी मसाला)
1/2Tsp- Turmeric Powder (हलदी पाउडर)
1Tbsp- Kewra Water (केवड़ा जल)
100gm- Fry Brown Onion (तले हुवे प्याज़)
1tbsp -Mint leave(पुदीना पत्ता)
2Tbsp- Coriander leaves(घनिया पत्ता)
1Tsp- lemon juice (नीबू का रस)
2.For preparaing the Rice -

300Gm - Basmati Rice (बासमती चावल)
4 Cloves - (लोंग)
1Tbsp- oil (तेल)
1 black Cardamom- (मोटी इलायची)
6to8- Pepper Corn- (सबूत काली मिर्च)
1Tsp- Salt(नमक)
2 Bay leave- (तेज़ पत्ता)
1 Small Mace(जावित्री)
1/2Star Anise- (चकरी फूल)
3 green Cardamom- ( छोटी इलायची)
1 Stick Cinnamon (दालचीनी)



3.For making The Biryani -

1tbsp -Mint leave(पुदीना पत्ता)
1/2tsp - Cumin Seeds (जीरा)
1/2Cup Rice Water (पके चावल का पानी)
Saffron theard soaked in 4 Tbsp Milk- (दूध में भिगोये केसर के धागे )
100gm- Fry brown Onion (तले हुए प्याज़)
1Tbsp- Coriander Leaves (घनिया पत्ता)
1Tsp- mint leave -(पुदीना पत्ता )
2Tsp- Ghee (घी)
1Tbsp- Kewra Water (केवड़ा जल)
Foil paper ( फॉयल पेपर)

4. For Making Raita -

200gm- fresh Yogurt ( ताज़ी दही)
1/2Chopped Cucumber (खीरा)
1Small Fine Chopped Carrot (गाजर)
1Small fine Chopped Onion (प्याज़)
1tsp- Chopped Coriander Leaves
1Small Chopped Tomato (टमाटर)
1 Chopped green chilli (हरी मिर्च)
1/2 tsp- Red Chilli Powder (लाल मिर्च पाउडर)
1/2tsp - black Salt (काला नमक)
1/2tsp - Salt (नमक)
1/2tsp- Rosted Cumin Powder (भुना जीरा पाउडर)
