1/3 cup Moong dal
1/3 cup thoor dal
1/3 cup Urad dal
2 kashmiri chilies
3 regular chilies
4 pepper
1/8 tsp Cumin seeds
Curry leaves
pinch of Asafoetida
1/8 tsp Oil
3/4 tsp Salt

It is impossible to imagine 'Andhra meals' without Paruppu Podi. Here is a recipe Rakesh Raghunathan learnt from an old lady in a remote village in Andhra Pradesh. Steaming hot rice, dollops of ghee and this podi over it - you will fall in love all over again..

Ingredients:
* Toor dhal – ½ cup
* Fried gram / Pottukadalai – ½ cup
* Red chillies (round) – 4 nos
* Bydagi or Kashmiri chilly – 4 nos
* Garlic – 10 cloves
* Cumin seeds – 1 tsp
* Asafoetida – 1 tsp
* Curry leaves – 1 sprig
* Sesame / Peanut oil – 1 tsp
* Salt
Method:
1. In a wok, heat oil and roast the asafoetida until brown.
2. Once brown, add the chillies and fry. Remove and set aside to cool.
3. Add the toor dhal and fry till colour turns golden.
4. Then add the fried gram dhal and cumin seeds.
5. The fried gram need not cook for too long or change colour.
6. The cumin seeds need to get warm in the heat and must not splutter.
7. Set aside the roasted lentils and cumin in a separate vessel.
8. In the same wok, add the garlic and curry leaves and dry roast them. The skin in the garlic can be left as is. Set aside to cool.
9. When all three items are cool - grind the chillies, asafoetida and salt to a coarse powder.
10. To this, add the roasted lentils and grind to a coarse powder.
11. Add the roasted curry leaves and garlic to the lentil powder and grind to a fine powder.
12. Allow cooling completely before putting it inside a bottle.
13. Serve with steaming hot rice and ghee.

Ingredients
Cooked Rice - 2 cups
Parrupu Podi, gingerly oil, mustard seeds, jeera, red chilly, curry leaves.
Steps
Rice should be non sticky and warm. Add Parrupu Podi to the warm rice and mix gently. Taste it and adjust podi and salt.
In 4 tsp of gingerly oil fry all ingredients and add it to the podi rice.
Gingerly oil keeps the rice soft, until lunch time.

In this video, I am going to share you on how to make andhra special paruppu podi (gun powder) in tamil. Paruppu Podi, a smooth dal powder made with toor dal, roasted gram and few other spices. Paruppu podi is a handy ready to eat, must have mix in our pantry. A spoon of Paruppu podi mixed with hot steaming rice along with a generous spoon of ghee makes us drool! Paruppu Podi can be made in diffferent ways. Paruppu podi, a must have homemade powder in many of our pantry especially in Tamil Nadu. Whenever we feel lazy or just returned from travel, we can quickly make rice and mix the paruppu podi along with generous spoon of ghee and relish with a toasted papad.
