1 lb Roma tomatoes
1 English cucumber
½ medium red onion, sliced
2 avocados, diced
2 Tbsp extra virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
¼ cup (1/2 bunch) cilantro, chopped
1 tsp sea salt or ¾ tsp table salt
⅛ tsp black pepper

Cucumber Tomato Salad is a super simple healthy salad that packs a punch of flavor. You'll love the delicious lemon dill dressing!


Can I make this recipe into a Creamy Cucumber Tomato Salad?
This recipe, as written, produces a Cucumber Tomato Salad with a Lemon-Dill dressing. To make a creamy variety, simply add in 1/3 cup of sour cream or plain greek yogurt to your dressing mixture.




INGREDIENTS

2 English cucumbers, diced
1 pint cherry tomatoes, quartered
1 red onion, diced
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1 teaspoon granulated sugar or honey
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh dill, minced



INSTRUCTIONS

1. In a large bowl, toss together cucumber, tomatoes, and onion.

2. In a small bowl, whisk together olive oil, lemon juice, vinegar, sugar, salt, pepper, and dill.

3. Pour over cucumbers and toss to combine.

4. Cover and refrigerate at least 1 hour before serving.

1 lb salmon, boneless, skinless
1 tsp sea salt
1/4 tsp black pepper

Ingredients for Healthy Cobb Seafood Salad:

1/2 red onion (medium) thinly sliced

Ingredients
1/2 cup sour cream
2 tablespoons distilled white vinegar
4 cloves garlic minced
2 tablespoons freshly chopped dill
2 teaspoons sugar
1/4 teaspoon salt
2 English cucumbers thinly sliced
1 red onion thinly sliced

Instructions
1️⃣ In a large bowl whisk together sour cream, vinegar, garlic, dill, sugar, and salt.


2️⃣Add cucumbers and onion into the mixture and stir until combined.


3️⃣Cover with plastic wrap and refrigerate 1 hour, or until ready to serve.
