This pan fried seared salmon is poached in its own sauce rendering it flaky and moist. There’s the option of a crispy skin, by baking it separately if you wish to impress. It’s the only way to get a crispy skin with a cream sauce. Without the optional crispy skin, this dish is quick and easy to make and guaranteed to be of restaurant quality. Of course you need good salmon first, so buy it fresh from your local fish monger. These types of fish are generally cooked medium to medium rare so please don’t overcook it unless you absolutely must. Either way you will fall in love after your first morsel of this delectable one pan wonder dish.

4 servings
Ingredients:
2-4 salmon fillets (180g per fillet)
1/3 cup (75g) butter
2 tablespoons fresh Lemon juice
Lemon zest
2/3 cup (160ml) White wine – optional /or chicken broth
1/2 cup (120ml) Heavy cream
2 tablespoons chopped parsley
Salt
Black pepper
Directions:
1. Remove the skin from salmon fillets. Season with salt and pepper.
2. Melt butter over medium-low heat. Fry the salmon on both sides until golden, about 3-4 minutes from each side.
3. Add to the pan white wine, lemon juice, lemon zest and heavy cream. Cook the salmon in the sauce for about 3 minutes and remove from the pan.
4. Season the sauce with salt and pepper. Add chopped parsley and stir. Reduce sauce by half until thick.
5. Serve the salmon and pour the sauce over the salmon.
Notes:
• In the video you can see me cooking only 2 salmon pieces, but this recipe serves 4. You can cook 4 pieces once in a large pan or in two batches, then divide the too.
• Serve the sauce immediately.

Ingredients:
- 4 salmon fillets, skin off (or Trout or any white fish)
- Salt and pepper, to season
- 2 tablespoons olive oil
- 2 tablespoons butter
- 6 cloves garlic, finely diced
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1/3 cup dry white wine
- 5 ounces (150 g) jarred sun dried tomato, drained of oil
- 1 3/4 cups double cream
- 3 cups baby spinach leaves
- 1/2 cup fresh grated Parmesan cheese
- 1 teaspoon cornstarch (cornflour) mixed with 1 tablespoons of water (optional)**
- 1 tablespoon fresh parsley chopped

Instructions:
1. Heat the oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once cooked, remove from the pan and set aside.

2. Melt the butter in the remaining juices leftover in the pan. Add in the garlic and fry until fragrant (about one minute). Fry the onion in the butter. Pour in the white wine (if using), and allow to reduce down slightly. Add the sun dried tomatoes and fry for 1-2 minutes to release their flavours.

3. Reduce heat to low heat, add the half and half (or heavy cream), and bring to a gentle simmer, while stirring occasionally. Season with salt and pepper to your taste.

4. Add in the spinach leaves and allow to wilt in the sauce, and add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. (For a thicker sauce, add the milk/cornstarch mixture to the centre of the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens.)
5. Add the salmon back into the pan; sprinkle with the parsley, and spoon the sauce over each filet.

6. Serve over pasta, rice or steamed veg.

Creamy Salmon Picatta

Pan-seared salmon, inspired by Cooking Classy, doused with a creamy, lemon butter sauce and sprinkled with capers and fresh parsley is sure to become your favorite go-to for a fancy yet fuss-free meal.

Salmon piccata is a welcome variation from the classic veal piccata or more commonly served chicken piccata. Though the protein component of this recipe can change, the creamy, dreamy sauce maintains the same assertive buttery citrus flavor that makes it a favorite. It’s a wonderfully rich accent for any poultry or fish dish, but salmon and piccata sauce are made for each other.

Drying the fish with paper towel and making sure your skillet is hot are the keys to getting that perfect pan sear. Don’t skip these details, or you’ll miss out on the thin layer of crispness that gives way to moist, flaky flesh.

After you sear the fish, you’ll prepare the piccata sauce in the same pan to eke every bit of flavor out of the salmon-infused oil. Then, you’ll nestle the salmon fillets in the skillet and drizzle them with the sauce. Just a scattering of capers and parsley, and it’s ready to serve.

Sauce:
¾ C Heavy Whipping Cream
½ C Dry White Wine
¼ C Fresh Lemon Juice
3 T Diced Shallots
1 Tsp Grated Lemon Peel
½ C Butter (cut into 4 pieces)
¼ Tsp Salt (or to taste)
1/8 Pepper (or to taste)

Wild/Dirty Rice
Organic
Prepare as directed from package

Brussel Sprouts:
Few Handfuls Brussel Sprouts
2 T Butter
1 T Olive Oil
2-3 T Balsamic Vinaigrette

Fresh Lemon (to squeeze on fish before eating)
