*Cooking Salmon: cast iron pan (skillet) or a heavy bottom pan. Pan searing (aka: pan grilling, pan frying) is done at a high heat. When cooking salmon on the stove, a heavy pan is best, because it retains the heat, which helps get the skin of the salmon crispy. It's a good method and very simple.

Perfect Pan Seared Salmon with Lemon butter Cream Sauce and Crispy Skin

This pan fried seared salmon is poached in its own sauce rendering it flaky and moist. There’s the option of a crispy skin, by baking it separately if you wish to impress. It’s the only way to get a crispy skin with a cream sauce. Without the optional crispy skin, this dish is quick and easy to make and guaranteed to be of restaurant quality. Of course you need good salmon first, so buy it fresh from your local fish monger. These types of fish are generally cooked medium to medium rare so please don’t overcook it unless you absolutely must. Either way you will fall in love after your first morsel of this delectable one pan wonder dish.

2-4 salmon fillets (180g per fillet)
1/3 cup (75g) butter
2 tablespoons fresh Lemon juice
2/3 cup (160ml) White wine – optional /or chicken broth
1/2 cup (120ml) Heavy cream
2 tablespoons chopped parsley
1. Remove the skin from salmon fillets. Season with salt and pepper.
2. Melt butter over medium-low heat. Fry the salmon on both sides until golden, about 3-4 minutes from each side.
3. Add to the pan white wine, lemon juice, lemon zest and heavy cream. Cook the salmon in the sauce for about 3 minutes and remove from the pan.
4. Season the sauce with salt and pepper. Add chopped parsley and stir. Reduce sauce by half until thick.
5. Serve the salmon and pour the sauce over the salmon.
• In the video you can see me cooking only 2 salmon pieces, but this recipe serves 4. You can cook 4 pieces once in a large pan or in two batches, then divide the too.
• Serve the sauce immediately.

Pan Seared Salmon Recipe with Lemon Butter Sauce
Prep Time 15 minutes

2 pound wild caught salmon fillet
2 tablespoons of olive oil
1 stick of unsalted butter
1 peeled and small diced shallot
2 finely minced cloves of garlic
juice of ½ lemon
¼ cup of chardonnay
¾ cup of heavy whipping cream
1 tablespoon of capers
1 ½ teaspoons of fresh chopped dill
Kosher salt and fresh cracked pepper to taste
1. Season the fish well on both sides with salt and pepper.
2. Add the olive oil to a large saute pan over medium-high heat and once it begins to lightly smoke add in the fish and pan sear for 3 to 4 minutes.
3. Once you flip the fish over add in 3 tablespoons of unsalted butter and generously baste the fish constantly until it is finished cooking, about 3 to 4 minutes. Set the fish aside and drain the fat from the pan.
4. Add 1 tablespoon of butter to the pan and caramelize the shallots and garlic, about 3 to 4 minutes and deglaze with lemon juice and cook until the liquid is almost gone.
5. Deglaze again with the chardonnay and cook it until it too is almost gone.
6. Add in the cream and cook over medium heat until it becomes very thick, think alfredo sauce.
7. Remove the pan from the heat and finish by whisking in the remaining 4 tablespoons of butter, capers, and dill.
8. Spoon the sauce over top of the cooked salmon and enjoy.

PAN SEARED SALMON W/ LEMON BUTTER SAUCE
1 - 6 ounce Salmon Filet, rinsed & pat dried
1 tablespoon vegetable oil
1/4 cup white wine
Juice of 1/2 a fresh lemon
1/4 teaspoon fresh garlic, minced
1/2 teaspoon shallot, minced
1/4 teaspoon dill weed, dried
1/4 teaspoon basil, dried
2 tablespoons unsalted butter, cubed & chilled
Kosher Salt & Fresh Cracked Pepper to taste
1. Lightly salt and pepper salmon filet. Set aside.
2. Heat a 12-inch frying pan, over medium-heat, until hot. Add oil. Gently, place seasoned Salmon Filet (skin side up) in pan. Sear Salmon for 2-3 minutes. Carefully, flip Salmon Filet (skin side down) and continue to sear for an additional 3-4 minutes.
3. Remove Salmon from frying pan to dish. Cover with tin foil to keep warm.
4. Meanwhile, wipe out excess oil from frying pan with a paper towel. Add wine, lemon juice, shallots, garlic, dried dill weed & basil. Bubble for 2-3 minutes. Add chilled butter. Continue to stir until butter has melted.
5. Spoon Lemon Sauce over Salmon. Served immediately!!
TiP: May keep SALMON FILET warm in 200 degree F. oven, wrapped in foil, up to 30 minutes. Add warm sauce before serving.

So you can succeed in fried pan salmon with skin. The salmon fillet is fried crispy and remains wonderfully juicy.
Here is the list of ingredients for the fried salmon with skin
2 salmon fillet - approx. 300 g per salmon fillet - both
together approx. 600 g - one salmon fillet per person.
150 g cold butter
1 lemon - of which the lemon juice
1 small clove of garlic - cut very finely
1 tbsp parsley - finely chopped
Salt and pepper to season, to fry a highly heatable frying oil.
- the salmon must be at room temperature
- the salmon must be really dry
- Season the salmon on the meat side with salt and pepper
- the meat side - the seasoned side is fried first
- the salmon must be placed in the hot pan - with a medium one
Temperature from the stove
- do not move the salmon for 3 minutes
- after about 3 minutes turn the salmon - now the skin side
down in the pan
- switch off the stove and fry the salmon with the residual heat from the
stove for 3 minutes
- after turning the salmon start immediately with the lemon butter sauce
- the lemon butter sauce is ready in 3 minutes when all the
ingredients stand ready
- the salmon can now be served

Lemon Butter Seared Salmon Recipe - Easy Salmon Recipe
An Amazing Seared salmon recipe with lemon butter sauce that is packed with flavor. This salmon recipe is skillet seared to a perfect texture, and the lemon butter sauce takes the salmon to a whole different level of yumminess ;D You guys will absolutely love this restaurant quality salmon recipe. I normally serve the salmon with rice and roasted asparagus, but you can also serve with mashed potatoes.

RECIPE: PAN SEARED SALMON FILLET
4 pieces salmon fillets, each about 6-ounces
Salt and freshly cracked black pepper, to taste
1-2 tbsp. olive oil (15-25 ml)
1 ½ tbsp. Canadian whisky or Smoked Bourbon (20 ml)
1 ½ tbsp. grainy Dijon mustard (20 ml)
1 ½ tbsp. maple syrup (20 ml)
Preheat oven to 375 degrees F.
Drizzle salmon on both sides with olive oil and season with salt and cracked black pepper. Heat dry cast iron skillet over medium heat for about 2 min. Add the salmon, skin side down and sear until skin is brown, about 3 minutes and flip over to brown top slightly for 1 minute. Flip back over onto skin side down.
Meanwhile, combine maple syrup, Dijon mustard and whisky in small bowl. Brush glaze on top of salmon.
Transfer salmon in cast iron fry pan to preheated oven. Bake salmon until just cooked through, firm to the touch and when knife inserted in centre feels warm to touch, about 3-4 minutes depending on thickness of fish.

Seared Salmon Recipe | Pan Seared Salmon With Wine Butter Lemon Sauce | Rockin Robin Cooks
In this recipe you will learn how to make seared salmon with my wine, lemon, butter, sour cream sauce. This is one of my easy fish recipes that comes together quick and is perfect for a weeknight dinner. We will be pan searing our fish and the sauce is made in minutes. Seared salmon with wine butter lemon sauce
¾ lb. of wild King salmon
1 cup white wine
½ cup sour cream
2 Tbs. organic butter, cut into chunks
2 Tbsp. fresh lemon juice
1 Tbsp. sugar
Zest from an organic lemon
Parsley for garnish
Pour the wine into a small pan and heat over medium high heat for about 10 minutes or until the wine is reduced by half. Add the sugar and stir until it dissolves. Then add the lemon juice and stir to mix in.
Bring the wine mixture back up to a boil and then turn off the heat and add the butter, stirring until the butter is completely melted. Add the sour cream and use a whisk to blend it in until it is smooth and creamy. Add the lemon zest and stir it in. Taste the sauce and add a bit of sugar if needed to suit your taste. Set aside and keep warm.
Preheat your grill pan over medium high heat. Rub olive oil over both sides of the salmon. Then salt and pepper one side.
Once the grill pan is hot, lay the salmon skin side up. You may reduce the the heat to medium low. Let the fish grill about 4 minutes per side for a 1 inch thick piece of salmon. My fish was ½ inch thick so I cooked it 2 minutes on the first side and 2 ½ on the second. You know the salmon is done when it flakes.
Serve the salmon and spoon the sauce over the top. Finish with a garnish of parsley. Cook up some veggies and my cucumber salad recipe and you will have a delicious lunch or dinner.
Tips: There are many types of salmon you can use in this recipe such as salmon filets also called fillets, salmon steaks. Try to use wild caught if possible.
King salmon is my favorite but you can use Atlantic salmon, sockeye and pink salmon.
This fish recipe is gluten free. Always read labels.
